Potato Skins

I have long wondered about the carb content of baked potato skins and cannot find a solid answer anywhere on the boards. I thought maybe an Atkins Nutritionist could give an official answer on this one? I have heard varying things about the carb count being higher when the potato is baked, etc. I would be content even with an estimated carb count, since the amount of potato "meat" left attached to the skin will vary from potato skin to potato skin. Thanks!

Kelly, did you try Fitday.com? It's a great resource and they have most everything I've searched for regarding natural foods.

Fitday shows the following:

(I included both the skin only AND the whole potato for validation purposes.)

Potato, baked, skin w/o salt: (1 skin - no size choice)
115 cals
0 fat
27 carbs
5 fiber
2 protein

Potato, baked, flesh and skin w/o salt: (1 large)
278 cals
0 fat
63 carbs
7 fiber
7 protein

Wow..what a surprise..i don't eat them but I had assumed they would be mostly fiber...ty for the info!

In Fran McCullough's "The Low Carb Cookbook", she has a recipe for potato skins. Using a russet potato and leaving only about 1/4" of potato "meat", she figures it should be about 10-15 carbs. Hope that helped!
