soft boiled eggs versus hard boiled
I am trying to eat inexpensively low carb and am borderline diabetic.
For me that means eating eggs. I'm not afraid of eggs at all as far as cholesterol is concerned. My cholesterol is not what it should be YET, but I feel confident that is because of the high blood sugars I have been exeriencing and my extreme insulin resistance. My triglycerides were too high, but I understand they can be while losing weight which I am doing and am taking some baby aspirin every day as Dr. Sears recommends in his book to do during the weight loss phase. I have just started to eat every single day no matter what - 3.5 ounces of kipper snacks (which is really smoked herring) because it is a source of omega 3 fish oil from small fish that don't have high mercury levels. This has helped my arthritis like you wouldn't believe. I love what this stuff does for my joints. Dr. Sears said it helps arthritis and it does! I also fully expect my good cholesterol to go up as a result of this dietary change. Realistically, I also fully expect my triglycerides to be too high until I am finished losing weight, but will take my baby aspirin and eat my fish to counteract that. I am starting to use a glucose meter and test my blood sugar and work out a diet based upon how I react to different foods. My goal is to completely control my blood sugar level and I am reading Dr. Bernstein's book, "The Diabetes Solution." and loving it. This man is talking to ME! and he knows what he's talking about. And I said all that to say this. I am not afraid of eating eggs and plan on eating them and eventually having perfect cholesterol scores (after I reach goal weight). And I really said all that just to justify my decision to eat eggs inspite of the fact that I don't have perfect cholesterol scores YET. And now that I have defended my decision to eat eggs, here is my question (finally!). I have noticed that if I eat hardboiled eggs, I seem to never really feel satisfied and find myself overeating them, but if I eat soft boiled eggs, I fill up easily with a small quantity. So here is my question. Are soft boiled eggs more nutritious than hard boiled eggs? Just curious as to why they seem to be more satisfying? I don't know where I come up with these questions. This is how my mind works. Sorry. Just curious. Obviously the thing for me to do is eat soft boiled eggs as they work better for me. Just really a curiousity question.

Free..(LOL) no idea..but have to say..it's the same for me!
I now make myself eat early..as I've made a comitment to runing 45 min 5 days a week. I find I have way less energy if I don't eat before I run. I started to have scrambled eggs in the am..but found by 9-10 ( I eat around 6:30 am) I was starving! One day..out of shear boredom...I made 2 soft boiled eggs. Man..I felt really full! and was fine untill lunch! I tried it again the next day..and yup..same thing. I doupt there is any diffrence in nutrition..what I figured is maybe the soft boiled gets metabolized faster..thus you get that full feeling sooner? Will be intresting to see what the An says ![]()

I haven't experimented with which type fills me up the most, but I think the Drs.Eades talk about eggs losing some of their nutritional value when scrambled or boiled too long--something about the yolk not getting cooked at too a high of a temperature. I can't remember now where I read this or exactly what it said...but that doesn't really answer you question anyway, does it

I wonder if it has to do with the consistency of the yolks. When the yolk is soft, it's more fatty-like, which might make it more satisfying. It also would sort of coat your stomach rather than just sit in there in little crumbles. Just an idea anyway.
