I'm not sure if you are aware that alot of people make what is called Yocheese. It is full fat plain yogurt, with the whey drained off. You put it in a strainer with a paper towel or coffee filter overnight and it yields about half of the original amount. This is REALLY yummy stuff. Apparently good for alot of folks that cannot tolerate dairy.
My question is. There is considerable debate about the amount of carbs in the end product. Any clues?? I use Stoneyfield Farm organic and this is the label info serving size 1 cup calories 180 fat 9g total carb 16g fiber 3g sugars 13g protein 9g Thanks!!

Hi There!
In the yogurt thread, we count 1 cup of yocheese as 4 carbs. As long as you use plain, full fat yogurt, we count it as 4. I use the same brand as you. I count mine as 6 per cup instead of 4 because it has extra cream added. Here is an explanation why we choose to count it that way. Many people have strong opinions about this particular topic. I just asked this question on another thread. The thing is, if you are draining out a lot of the whey, which is where a lot of the carbs are, it should be even less than 4 carbs per cup. I think it would alter the other nutritional info as well. Higher fat and protein per cup. It bugs me not knowing the exact numbers. LOL.

Sorry it took so long, I didn't see your post! I'll have to refer your question to one of our food scientists. They would know what components of the yogurt would be most likely to drain through the filter, and which components would be most likely to stay in the yogurt. But even that would be an estimate. An analysis would have to be done a few times and averaged to get a more accurate idea. I can't promise they'll do an actual analysis, but I'll ask.
There are a few yogurts that I know of that are lower in carbs: Hoods is one, and Dannon makes a carb controlled 3 net carb yogurt. Will get back to you when I know more. |

I worked the numbers a while ago and this is what I came up with.
1/2 cup (123g) 120 cal 7.5g protein 7.9g fat 5.1g carb I used 4 cups of Dannon whole milk plain yogurt, and measured 2 cups of liquid whey removed. I took the total nutrutional count of the yogurt and subtracted the total nutritional count of the whey. The numbers will vary based on drainage time, but it's a decent place to start. I'm curious to see the Atkins Nutritional person comes up with similar numbers. |

Thanks for reminding me. I didn't get a response but I'll send my email to someone else and let you know. But Fizgig's estimate seems like it may be accurate since the actual experiment was done and drainage time was considered.

I just spoke with our senior food scientist, who has a PhD in dairy science so he is the perfect one to discuss this with. After you drain off the whey, what you are losing is mainly the calcium. No carbohydrate is drained. Lactobacillus is a bacteria in the yogurt that reduces the total carbohydrate content by fermenting the carbohydrate lactose to lactic acid. What is on the label already reflects what was fermented. You may be losing some lactic acid by draining the yogurt, but this is not part of the carbohydrate content listed on the label. Lactic acid is low glycemic. Fat content of yogurts vary greatly, but he said it is unlikely that draining the yogurt will reduce the fat content either. Only the protein content will change, not the carbohydrate or fat content. Hope this helps!

I'm going by memory............
1 - 32 oz container of Dannon Yogurt (full fat plain) equals 16 oz of yocheese and 16 oz of whey. The whey is 7 carbs per cup. So, you're pouring off 14 carbs and leaving 14 carbs in 2 cups - 7 per cup of yocheese. The calories are pretty high I remember. I don't remember the whey calorie count for accurate figure. |

I have 6 oz yocheese with 1 oz unsalted soynuts every morning for breakfast with 4 oz of frozen blueberries mixed with splenda & cinnamon.
I don't really think the problem is with the yocheese but more with the portion sizes. I have lost consistently since I started weighing my low carb portions of yocheese and meat and veggies, etc. Prior to that I was eating when I felt like it which is very unreliable. Today, I eat roughly 1600 calories a day, 100 Total Carbs with 35 fiber carbs, and have lost 6-7 lbs a month for the last 10 months. I don't eat sugars or grains or sugar alcohols or LC products other than splenda to sweeten. Just whole foods, meats, yocheese, hard cheese, eggs, vegetables, fruit, good fats, soynuts & soybeans.
