How do bean sprouts rank?
I really like bean sprouts. They are so full of water and they are such a great texture, they make a thirst quenching, crunchy snack.
I have also found that they and broccoli-slaw work well to replace noodles in some dishes. I know that the broc is a good vegetable choice but I wonder if these sprouts (or any sprouts) are a smart choice for getting good food value out of my available carbohydrates. What can you tell me about various sprouts and their value to me? |

Bean sprouts are small, immature shoots sprouted from a wide variety of seeds and beans including mung bean, soybean, lentil and alfalfa. Sprouts from mung been are most widely used and have been used for food since ancient times. These sprouts have nutrient value similar to asparagus and mushroom.
