Pork Rind Nachos

My pork rind Nachos were a super yummy and filling dinner. Just some cheese and ground beef, jalapenos, sour cream and avocados....delish

OMG Toritos (Yellow jalapeno stuffed with shrimp and wrapped in bacon)

These are my new favorite! Yellow jalapeno peppers stuffed with shrimp, wrapped in bacon and they are soaking in low sodium soy sauce....seriously delish!

that plate of pork rinds nachos looks a heck of a lot more edible that the chocolate covered dessert my DW tried to get me to eat.
The stuffed jalapeno looks like a hit as well. I make the standard cream cheese stuffed version wrapped with bacon.
Too bad all the local stores have here are the green jalapenos

Rbenz, yes if you like black olives, you will be hooked making them this way. I used mayo and dijon mustard for the yolks.

We usually use mayo and spicy brown mustard. I will have to give the dijon a go.

Sushi lovers, here is a new way to enjoy it. Always wanted to try but forgot about it. It's called a naruto roll. Omit rice and use cucumber to wrap it. This one is tuna and Avacado. The sashimi on left was yellowtail. Extremely delicious!!!
