Welcome! the closer to goal the harder it is to lose a bunch at one time... I would shoot for 1 to 2 lbs a week.... starting out its good to measure too....

Here's a gumbo I want to try... or at least my rendition of it.

3 large boneless skinless chicken breasts, or a whole chicken or 4 boneless skinless chicken thighs, or 6-8 chicken tenders

olive oil
1/4 C coconut flour
1 large onion, diced
3 celery stalks, chopped
1 heaping tablespoon garlic, minced
1 large bell pepper, chopped
1 - 3 bay leaves, depending on size
2 tablespoons fresh parsley, chopped or 1 tablespoon dried
14 oz can of diced tomatoes with juice
1/2# andouille sausage, sliced
1/2# smoked sausage, sliced
4 C chicken broth
1/3 c green onions, sliced for garnish
fresh chopped parsley for garnish

In a 6-quart pot, heat enough oil to coat the bottom of pan and fry chicken, in batches, until it is nicely brown. Remove chicken and set aside. When cool enough to work with remove skin and bones and cut or tear chicken into pieces. To get fat ready cook it down over medium-low heat to reduce mixture to just chicken fat/oil. Reserve 3/4 cup fat for the roux. Cut sausage into 1/4" rounds or 1/4" half moons and simmer then in water for about 10 minutes. set aside. To make the roux, on medium or medium-low heat, whisk in flour a little at a time to reserved fat until a medium paste is formed. Allow to brown but not burn. Add all the vegetables except the garlic to browned roux, and over low heat let them sweat until soft. This will cause the roux toi seize up, but it's suppose to do that, and it will keep the roux from cooking much more. When the vegetables are soft add the chicken broth and stir roux into a smooth sauce. Add garlic, bay leaf, green onions, parsley and tomatoes. Taste and add salt and pepper to taste. Reduce heat and simmer on low heat for 1-2 hours. If more liquid is needed just add more broth. Stir occasionally to keep roux from sticking to the bottom of pot and burning. Bring sauce back to a low boil then add sausage and chicken about 30 minutes before serving; stir gently. Remove from heat and serve over "riced cauliflower or vegetable of your choice.

Thanks everyone for the BDay wishes! I gave in a little and had some nocarb eggnog, but it was off plan because of the almond milk. AND a little nibble of a SF chocolate cookie. Otherwise stayed on plan, but may be up tomorrow from the almond milk.

Pcalt - so funny what your weight is doing. It's gotta give some time.

Laura - WTG Girl!

Trini - Congrats on the drop.

Meenie, I know most say try 1-2lbs a week. But so many have trouble or should I say a slower, sometimes much slower loss when 20lbs or less to goal. My suggestion would be to just make your goal this month to stay on plan with no cheats. I have read of many who may, may - lose 1-2lbs a month when so close to goal.

I'm at a new low so I'm really happy about that. I'm hoping that tomorrow I see an "8". If I suddenly disappear, don't worry, my laptop is dying I think. Last night it gave the screech of death and of course my dh just left for a week. Fingers crossed this thing holds out.

Avaleigh, too much of any kind of cheese will stall me or make me gain. Maybe you're one of the people who are sensitive to it too. You'll get this figured out and be going down again.

Meenie, Welcome! I set goals but don't really try to hit them. My body has a mind of its own. Sometimes I lose 2 lbs sometimes I lose 9 lbs a month. I even gained one month. Its hard to predict what your body will do so just go with the flow.

Trini, you are doing awesome! WTG on getting to a new decade! You are so right about supporting the local farmers.

Laura, Glad to see you moving down again!

Congrats to all of the losers! I'm so glad to see the scale moving down again for those that were stuck.

no loses for me this morning... Dh hit the 250's with a 259.. he was so happy.. he is hoping to see to 250 by the end of the month, I told him to shoot for 255... we are both happy with our weight loss, of course we would like for it to go faster, but have to remind ourselves that we didn't put it all on overnight, so we can't lose it all over night... another dreary day here in Alabama... so ready for the sun to shine again... hope everyone has a blessed Sunday... be back later

Sunday weigh in: Thought I was gonna hit "one-derland" this morning but no such luck. Mid week I hit 200 again and thought today would be 199 but it wasn't there. My 9th week is the first without a loss. Last night had some bologna with mozza/cheddar sprinkled over it and dessert was jello & hwc. Did that do it?? I'm down to one coffee, hwc & Splenda in the morning but last week had a coffee in the evening and not sure if that's the culprit or not. Oh well, hoping to be out of the 2's next Sunday.

So much to catch up on! I've had a crazy hectic week with lots of chaos and sadly the scale hasn't moved much. I think I will have to cut back on the extras I've been allowing (yogurt, LC cereal, almond milk, etc). They didn't stop my losses the first week but now I'm at a standstill so have to shake things up a bit.

Huge congrats to our losers! You guys are doing great! Always such an inspiration for me! KUTGW!

Hope everyone has a great weekend! Time to start laundry and house cleaning for me!

All 4 of my Barbie are home (Happy Mummy) DH in the kitchen making breakfast, bacon and eggs for me, somehow when he makes me eggs they taste better, I like eggs but sometimes after a week of eggs (induction) I get a little egg shy, so having him make it for me makes a difference, plus hearing all the voices of the children together setting the table and just joking around with their dad makes me happy.


Laura another drop yes yes you are doing it loved your gumbo recipe, son,t know where to purchase coconut flour will get son number one to buy it in the big city.

Julie : I had to go back on induction to push the loss, the closer to goal the more difficult, although I think that maintaining using healthy lower carb foods like fruits, vegetables, yogurt then going down to induction, basically meat and eggs with a green salad worked for me...I also upper the fat intake with my morning coffee.

Hi Trinigirl and all other Canadians on the site!! Nice to see more Canadians. I do love our American cousins though. I find it exciting to see LC friends from so many different places in the U.S.

Trinigirl, thanks for the reply and advice. You could be very right? Who knows? I can never seem to figure out what caused a problem. It could be the cheese too. Speaking of water weight.... does drinking water not cause a water weight problem??? I'm drinking 10 cups a day, albeit with MIO but I never used to drink the stuff, maybe a whole year used to be 1 glass. I've always been curious about that. Hmm......

That's very nice of you.

I don't think cutting back on coffee is gonna matter. I was down to one cup a day for several weeks and am only up one more for the last week or so so it could be the bologna, the cheese, the whipped cream on the jello... who knows. I'll just have to watch the whipped cream, I think. I just needed a Saturday night treat or maybe it was the big ff at Red Lobster

Bonny, I don't think the coffee is the issue either. But bologna may be....or any of the things that you mentioned. It really is a trial and error game with weight loss. I am still trying to figure out all my problem areas. I know processed food and eating out at restaurants even when they say 100% beef cause weight gain for me learned earlier this month. I don't seem to have any problem with dairy at all.

I expected much better results by now. I am on other forums and I see people who eat in the 100's for grams of carbs and are losing more than I am. No, not jumping ship here. It just gets a little discouraging especially when in over two weeks now I have only lost 4lbs. Still just trying to figure out how my body works. The difference from last month to now is that I am staying at around 1200cals a day, AND I had a few mess ups off plan-1st the Mickey D's burgers, the squash, then cookie, then eggnog.

So, I am doing strict 72 Induction again- Today is day 8 of it and lost 2lbs during that time so far. So I guess it is doing well. Just can't believe I let myself mess up like that to delay my weight loss. I may not make goal this month, but it is helping me see what I need to do to keep my weight loss active.

Thanks for all the kind words on getting back. Looks like I have a lot to catch up with. Well I made it until the margaritas on Friday night about 8pm. I drank way to much and ended up passing out shortly after. The sugar in the mix was over the top. When I woke up Saturday hung over I wanted a coke so bad but did not budget on that part. But did eat some toast and other carby things. But at 6pm I stopped all carb eating. It was a bad "plan alteration" but hey I got right back this morning and am refocused.

Sorry I let you guys down by breaking but I am right back on track. I hope this will help break up my stall and I will just sprint towards my goal of 240 by the end of the month. It was nice to give the hammys a break also. My right one still hurts quite a bit, so may be just weights for another day or so. Will read all the post and catch up now. Glad to be back.

mjgh06: You're right. It's all about the long haul right, not what you can do is 6 extreme months or so cause we all know those don't last. I guess it's a giant learning curve and I must get it in my head that this is a new lifestyle and NOT a crash diet. It's hard cause we all like to see big changes. My shape is an apple and thought my belly would go first but bust and waist is a inch down and hips are 5. Hmm, go figure?? I don't exercise and I guess it would help but..........

Kemp I think you have done a awesome job and think its awesome that you confessed your food sins and now you are ready to get back on track the ones that fail at this are the ones that get off and don't get back at it... but you have proven that you can do this...

Thanks Mycattaz, looking forward to getting it done. I avoided cokes and icecreams and the other snacks all around. But chips and queso was just to much!!! LOL Oh and a few snicker doodles and chocolate chip cookies. But I told myself enjoy it today because it is over in the morning, not Monday but Sunday morning. And I have stuck to that. Which usually if I fell off it would be for the whole weekend. I am already feeling better and hope to be back into ketosis by Tuesday. Although I will be checking in the morning.

Thanks MissyDee and MGH for the advice. I will lay off the veggies some and try not to eat anything with hidden sugars. On the 12th it was my birthday so I had crab legs and wings. Not sure if that was the culprit for the weight gain following that night.

11/16: 194 Finally a loss! But it was after a night of partying and I may have been just really dehydrated. Didn't weigh in this morning because I was out of town.

Last night I was out for an anniversary party and the menu was limited since it was a private party. I was able to avoid the potatoes and such but had a (big) bite of the chocolate mousse. It was delish however it triggered the sugar/carb cravings so today has been a big struggle.

Its amazing how psychological that scale can be.

smoothie detox - down 3 lbs in 3 days

I did the "smoothie detox" that I posted about earlier, just for 3 days for a change and to hopefully end the stall. (low carb smoothies 3x a day...20-30g max total carbs). It worked. I also took a rest from working out for those 3 days.

The body gets bored from eating the same things, and switching things up, does wonders for the metabolism!

I know how my body works and after a while, it gets tired of eating the same things. Adding low carb fruits, coconut water or coconut milk to the smoothies, really helps shed the water weight and fat.
...just 3 lbs away from my 160 November goal
