Going to a dinner party tonight
A close friend is having me and hubby plus two other couples over for dinner. She is totally supportive of my weightloss and so is making a roast with veggies and salad as the main. She has asked someone to bring a cheese platter for dessert, and asked me to bring an appetiser plate, obviously with foods that I can eat.
Any suggestions? At the moment I am planning on mini caprese sticks, with a cherry tomato, mozzarella ball and a basil leaf drizzled with olive oil, also some shaved salami, olives and maybe celery sticks and cream cheese dip but don't know a nice recipe yet.
I want it to look a bit classy and not just like a desperate plate of low carb nibbles! In a way I want to show them that living low carb is not missing out as so many people want to tell me!

There's an awesome stuffed mushroom recipe that we were just posting about the other day. I've actually been using it for many years in my family as an appetizer and they LOVE it. You just mix cream cheese and bacon bits together, stuff them in mushrooms, and bake at 375 for about 20 minutes or so. Until the mushrooms just start getting soft. AMAZING!
Another one is to mix dried beef, cream cheese, and green onions together and stuff celery with it.
