I just threw together my version of lc eggplant parmesian. I fried 1 whole eggplant cut into slices in olive oil and italian seasonings til they were slightly crisp. Then I used 2 cans of pizza sauce and added 2 cans of mushrooms. In 2 9x9 casserole dishes,I layered the sauce mixture, eggplant slices, pizza blend cheese, pepperoni, sauce, parmesian and more pizza blend cheese. It was AMAZING and just what I needed as I have been craving italian all day. The sauce I found had 2 carbs per serving but I am not sure about the numbers on the eggplant or mushrooms but there were about 9 slices of eggplant in the bottom of the dish and I guess each serving would have been about 2 slices with about a 1/4 of a can of mushrooms. I think that is pretty low. How did everyone do today?

Today was good! I really feel like I'm getting the hang of this! Also, I'm loving how I'm not as obsessed with food. It was 1:30 before I realized I hadn't eaten lunch. Amazing for me!

Your eggplant dish sounds really good! I got the fixings for that Linda Sue spinach lasanga to make this week. Looking forward to something Italian and something different.

I was going to tell you, if you're making that beef jerky, get it going early. I marinated the meat for about 6 hours and underestimated how long it would take to dehydrate. Don't want you to have to be up at 3am like I was messing with jerky!

Ill join! A little about me.
I'm Mandy, I'm 35 years old. I was a dermatology nurse practitioner for almost 12 years before becoming a SAHM to my beautiful special needs 3 year old little girl. I also have to incredible boys who are 13 and 11. My husband is active duty military,we just moved from upstate NY to southern Texas.. Big change but we love it. I was here last year, lost a lot of weight. I had a hysterectomy in May and have struggled since then it's hormone issues and gained it alllllllll back out of frustration, medication problems and stress eating. My baby girl had a stroke in November which rocked our world. Thankfully she is doing amazingly well now but it was an eye opener. She needs me, I'm all she has and I need to be healthy so here I am.ready to do it for life

Hi everyone! Just wanted to know has anyone used the videos on exercise TV (I know that exercisetv no longer exists). But there are a ton of them upload on youtube, the only thing is trying to find exercises that are low impact for those that are overweight is quiet difficult. Since Iam living aboard its a bit harder to get exercise videos other than the ones online. Thanks!

I made an Eggplant Parmesan as well last night, used ground turkey and ricotta as well. Also made pan seared lamb chops with fried kale and goat cheese, and a bell pepper slaw ( got the idea for the slaw from some one on the site). Today I am making Jalapeno Poppers, not sure what else. There are just so many choices when low carbing, and its still hard to believe that i'm losing weight and still enjoying my food!

I am hoping to be in Onederland before Mother's Day..what an awesome gift that would be.

Who all is exercising? How often, what are you doing, how many minutes per day. I have the food thing locked down just can't seem to get motivated to work out.

babyphat - I have been thinking the same thing about exercise! I started posting on an exercise thread yesterday since I need some motivation to get my rear in gear. I have this program on my iPhone that does intervals walking/jogging, so started that last night. I just listen to NPR or music and the time flies. I need to find some kind of weight training program like a DVD or something. Losing weight makes the flab get smaller, but it doesn't really get rid of it. Weight training changes my body composition so I have more lean muscle and less fat. It's been incredible in the past! Need to get back to it. Let me know your ideas!

Welcome skinnurse! My boyfriend had a stroke last year. Super scary! I couldn't imagine going through it with a little girl. My goodness, poor thing. Nice that you are able to devote more time to her now.

Meal plan today:
Breakfast - the last of the beef jerky need to make more!
Lunch - leftover tuna/cauli casserole - seems to reheat fine from a frozen state. Put a ton of hot sauce on it and it was amazing!
Dinner - made chicken stock last night and using it for a hot and sour chicken soup tonight

Weighed in at 206.4 today! I just started my period, so thinking it has something with that. I think I'll hold off on weighing for a few days if I can stay away from the scale.

Biggestloser and Babyphat,
I am alsothinking about exercising. I used to consider my gym time as my "me" time and I would leave every night after dinner and go to Planet Fitness and use the Ellyptical (sp) for an hour but that was several years ago. I sneaked a peak at the scale this morning and apparently I keep losing and gaining the same 2 pounds even though I am in dark purple ketosis. SO I am not sure what is up with that. When are you supposed to start watching the calories and stuff again? I know when you get started he says to not limit yourself on the induction foods and to eat when you are satisfied but I hear other people talking about their calorie intake and such. Anyone on this thread watch their calories too?

don't worry about the scales going up and down a bit. you find they may do this and then you will have a woosh and go down.

make sure that you are drinking enough and that you are not having too much sodium. To be honest it isn't so much counting calories and just making sure that your portions are not too big. I know personally that my view of what was ok to eat is very different to what should be eaten. It can take a while to reteach our brains that we don't have to have huge portions. I don't count calories and never have done on any of my times on Atkins and have lost without doing this as long as I am realistic and don't eat for the sake.

So sorry to hear about your little girl. We had a huge scare June of 2012 when my 13 yr old sons sinus infection seeped into his brain cavity and cause a severe infection in his brain. His right leg stopped working and he wasn't able to communicate with us. He was rushed to the hospital and they did an emergency brain surgery on him. There was 3 to 4 days in recovery where we weren't sure he would ever walk again. BUT PRAISE GOD, his recovery was dramatic and he is back to his normal self as if it never happened. So glad that your little girl is doing well now. I look forward to this journey to health with you.

So how was everyone's day? I am currently enjoying the aroma of drying beef jerky in the oven. mmhmmm I can't wait to eat some. I had a rough 13th day. Lots of carb cravings and a general lack of energy. I am going to go to bed early tonight and see if that helps me. I used to be able to get like 6 hours of sleep and be fine but it seems I need way more sleep lately. I have been hearing lots about extra vitamins and minerals that may help. Are any of you taking anything right now in induction?

Hey ladies! So I haven't been hungry at all for days. And all of a sudden at work today, I was starving! And there is still all this chocolate all over the kitchen and on everyone's desk from the holidays. It was torture! I need to start bringing snacks to work again just in case! I got home and ate a ton of spicy pork rinds dipped in sour cream. Holy moly, I don't know if I was just extremely hungry or if that was one of the best things I've ever tasted.

Mspartytime, Dr. Atkins did recommend supplements during induction. He really goes on and on about specific nutrients. What I gleaned is a good multi-vitamin is important during induction since we're restricting the variety of our food. He also recommends chromium, vitamin c, essential oils like fish oil and biotin. I've been thinking of picking up a multi and some fish oil. I don't know about all that other stuff!

Good morning everyone....hope your yesterday was great!

Breakfast was left over Lamb, kale and bell pepper slaw
Lunch was chicken breast roll ups
Dinner was jalapeno poppers and more slaw

And of course I snacked here and there but everything was LC :-)

Today.....kind of undecided but.....(and this is subject to change)

B: Bell pepper scramble
L: Shrimp, avocados, cilantro, tomatoes, onions, red and green bell peppers all marinated in key lime juice. This is a salad idea I got from the food porn thread
D: chicken breast sauteed in basalmic vinegar, onions, jalapenos and portabello mushrooms

I also got an idea for Philly Cheese steak stuffed bell peppers from the thread might do those.

As for working out ladies Leslie Sansone has been my go to for any physical activity over the last 10 years. Her workouts are super easy and can be done in 1 mile intervals and each mile is about 15 min. I have about 6 of her DVDs and lots of ankle and hand weights and dumbbells. So if I can find my "muse" I will be all set'' lol..... I guess I am so tired from running around all day I am too lazy to work out, but working out would only improve my energy level,,,,(sighing)

I also gain and lose the same 2 lbs. My weight goes up and down like an elevator but I am NOT giving up .......this way of eating has always been good to me. Nothing else works for me and that is not an exaggeration,. I have struggled with my weigh since I was 9 and have tried it all. Anyway onward and upward. I am just going to have to just buckle down and dust off my DVDs.

Breakfast: Browned beef with onion
Diet Coke, 20 oz

Snack: Detour 1 carb chocolate peanut butter bar, 20oz diet coke (seeing a pattern?)
Lunch: Linda Sue casserole with chicken, sausage, cauliflower, cream cheese and mushrooms
Snack 2: mozarella and tomatoes
1 cup strawberry paraiso tea (NOT DIET COKE)

Dinner: likely to be oopsie rolls with cheeseburgers.

Hi Everyone,
I did not go to bed early as I thought I would and if fact didn't get into bed til nearly 1pm cause of the delicious drying beef jerky in the oven. I woke up feeling exhausted again today. I did take a multivitamin this morning with breakfast. Hoping that helps. We breezed through our school work this morning and I was able to grab a 20 minute nap before lunch while the baby was asleep and the 2 and 3 year old were playing learning games on the computers. I felt a little better after that. Church tonight so no down time when the hubby gets home.

Menu today:
Breakfast: 3 boiled eggs and a piece of beef jerky
Lunch: leftover eggplant parmesian
Snack: beef jerky
Dinner: salt and pepper shrimp and veggies

I am using a 16oz water bottle today to keep filling so that I can figure out exactly how much water I am getting in a day. I read that you need to drink the water to flush out the fat. So here goes.

babyphat: I feel your pain about gaining and losing the same 2 lbs. That was my week last week. I am hoping to be past that this friday when I weigh in. Good luck!

Today started out blah...no time for breakfast we were running late to therapy.

B: Coffee, splenda and half/Half (its all the hospital had)
L: two eggs and 4oz steak
D: Chourizo/mushroom stuffed peppers with a small amount of cheese

B: Sausage Quiche

D: Chicken breast/broccoli and cauliflower
S: Roasted chicken slices

Exercise:
AM: Nothing - pulled my lower back playing softball last night so could not do the shred dvd.
PM: Walk away the pounds DVD (I can walk with out pain - so I can still do something)
