S: 2 TBS PB
S: 1 cheese sausage w/ melted Italian blend shredded cheese, mayo, water
S: (mini binge after work and before the treadmill) 1 Cadbury caramel egg, 1 Dipps granola bar w/ choc frosting, 1 slice cheddar, 2 IB prof
D: Mongolian beef, 1 Roma tomato w/ sliced cheddar, EVOO, basil, salt, 5 black olives, 2 cocktails

Water all day, vit c, d, allergy and bc pills before bed

Passion68, Thanks! I'm challenging myself to do a new avitar and motto each month. It's one of the nes ones from this site.

Lost 2 more pounds today to put me back at 272, where I was before going to the dentist. But I've been having tremendous pain and lack of sleep since yesterday evening. Staying on plan is the ony thing that will save me. Going off plan for even a little for days on end has terrible consequences for me. I lost a day of work today, even.

B - bacon and chicken eggs, ACV water, CO coffee w/ HWC 5 am
L- chicken salad, chicken breast, artichoke hearts 12 noon
S - atkins shake 4 pm
D - turkey w/gravy, rutabaga mash, sauteed whole green beans (in bacon fat) 7 pm
S - LC choc pudding w/ peanut butter & Coconut oil and coconut (I made it up as I went, so I need to try it again and write it down. DBF ate a little but said it was too rich for him.)10:30 pm

Hopefully I can sleep tonight.

I slept fine last night, but woke up shivering. There was no fever, but I was so cold. DBF said I felt like ice! I was very, very wasted. and I've already talked abt all this on my other threads.

Lost another pound! Yeah abt that!

B - bacon and eggs
L - deli turkey, greenbean/diced tomato "soup"
S - a smidgeon of pumpkin seeds
D - hot dogs w/chili and cheese (no bun) & pork rinds
S - going to try to make that chocolate thing I made last night.

Make yourself a graph of your weight loss. I have three 24 x 18 inch ones(several 1/4 inch grids glued on chart paper) taped one on top of the other on my small bathroom wall. Such an uplifting visual on my bad mornings to see how far I have traveled downward. I used to weigh every morning and tracked it from June -Dec. of 2011.
I have stalled for so long I have not tracked my morning 203 pounds. But I also have had 205 and 207 pound days when I just did not enter on the graph. I have stalled at 203-207 since Dec. and it is because of the extras (coffeemate, diet sprite, nuts, pork rinds, SF jello) and skipping breakfast that I attribute my "maintenance" to. The only way to get back on track is to not have those extras in my house. I am going to have to reread my DARND book again and remember how strict I must be on the plan. Things will get easier when school ends May 22. I teach kindergarten and have a lot of pressure from our system to have them reading fluently and writing the way I used to have my first grade students doing at the end of May. We are shoving it down their throats. I know it is for the best for this high-stakes testing mentality we have in Tennessee, but come on, half of my kids don't even know their phone number or address. When there are no little munchkins to worry about I will be able to focus on Walk Away The Pounds and preparing better low carb meals.

B-coffee, creamer (gotta stop this bad habit, HWC is in the refrigerator, no excuse), EZSWEETZ drops, egg, sausage (4 carbs)
L-4 slices Applewood Turkey (Oscar Meyer Naturals) wrapped around 2 Colby-Jack cheese sticks (6 carbs)
S-talapia, raw cauliflower with mayonnaise, curry, EZSWEETZ drops (6 carbs)

Hi everyone. For the few that were on here 4 weeks ago..I'm baaaccckkk.......and no my camping trip did not last that long....to everyone else good to meet you!! My computer died so I have been internet challenged for a few weeks. But back up and running!
I've been off plan since yesterday. Serious hormones raging! Planning to be back on plan in the a.m.

hee hee... unless being "on plan" includes chocolate cream pie for breakfast, I think I may have ruined the "getting on plan" for today. Throwing it out - along with the other c-r-a-p that has managed it's way into the house over the last two days and going to go get some good stuff(veges and meat).

L: Rosemary Sage Flax Crackers (6), alouette Creme de brie

(70g) 1/2
S: Cinnamon Danish Low Carb,
D: Gluc jello, 8 Coleman Natural Pesto Parmesan Chicken Meatballs
S: muffin in a mug 1/2, coconut oil 1T

I made the rosemary sage crackers after tasting Flackers. So easy to make and much cheaper! I omitted the vegetable protein because I didn't have any. However, my version has more calories per cracker. I combined 2 recipes online and used the ingredients on the Flackers package. I baked mine...too much trouble to unpack the dehydrator.


Rosemary Sage Flax Crackers

1 C Organic golden flax seeds, ground
1 C Organic brown flax seeds
1 tsp Organic apple cider vinegar
Vegetable protein from soybeans (skipped)
1 C Purified water, organic (add more if needed)
1 T Sage
3T Rosemary
salt to taste (or Braggs Aminos)

Mix together and spread on dehydrator sheets.
Sprinkle with salt.
Use blunt edge on long knife or spatula to score crackers.
Dry on 110 for 10-16 hours.
Flip and peel sheet off.
Put back in dehydrator and dry another 4 hours.
Longer is OK, you want them crisp.

Or bake at 350
Spread onto Silpat sheet.
Bake for 10 minutes, remove and flip, bake another 3 minutes.

If you want them super crispy, turn the oven off and then put the crackers back in after it's cooled a bit but is still warm.

Leave them in for about an hour (with oven off) and they will continue to dry out until super crispy.

Makes 18 crackers.

I found one on plan...for next time the craving hits.
Low Carb Chocolate Pie Filling

1 cup heavy cream
1 cup coconut milk
¾ cup powdered xylitol *
1 ½ teaspoons stevia extract
2 egg yolks
2 Tablespoons butter
½ teaspoon sugar-free vanilla extract
2 teaspoons xanthan gum
2 oz unsweetened chocolate, chopped finely
1 package gelatin (about 2 teaspoons), optional
⅛ teaspoon salt

Place cream, coconut milk and egg yolks in saucepan and mix well. Add xylitol, stevia, salt, and gelatin. Stir in chocolate. Slowly add the xanthan gum while whisking constantly over medium low heat. Bring to a boil and let boil one minute. Remove from heat. Stir in butter and vanilla. Let cool to room temperature. Pour into prepared pie shell.

Makes 8 servings
Carbs per serving: about 4.2 g

Oro, now tell me about the cabbage and curry paste. I bought curry powder last year before DBF moved in. He's a little uncertain abt Indian food (had a bad experience w/ it before) and I like it. What's your favorite LC curry recipe? It will be different eating it w/out rice, naan, or mango lassis! I could make the cauliflower "rice" though.

S - banana - off plan, but desparate to see if would stop foot pain. nope, and 23 net carbs. Just going to push potassium pills.
D- Crockpot roasted chicken w/carrot, onion, rutabaga, celery, small salad w/ ranch.
S- HWC & mixed berries

The weird part is that even though the banana pushed the carbs over limit, I only ate a little over 1000 calories. That's messed up. I do best eating more calories and fewer carbs.

Cabbage Yellow Curry
Serves 2
1 T Maesri Karee Curry Paste (Thai masaman Yellow Curry Paste)
1/2 head cabbage, chopped
1 tsp coconut oil
1/8 C water

Melt coconut oil, add cabbage and brown lightly.

Add Maesri Karee and water. Simmer until cabbage is fully wilted. Add water if needed.

Per serving
Cal 70
Carb 14
Fiber 6
Protein 3

Add 4 carbs and 50 calories if you add 2/3 C Trader Joe's coconut milk.

This is a take off on a spinach, coconut milk, shrimp curry dish.

Oro, IV drip! Yuk! I don't remember that on induction! I guess it's zero carbs!

Thanks for the cabbage recipe. I'll look up the ingredients on the paste and see how to turn my yellow powder into a usable paste. Remodeling and repairs have started. Cooking will be in a microwave with no kitchen sink a week or so. It's all going to be better in the long run!

B - bacon and eggs (only 1 more day )
L - chicken, tomato, greenbean soup
S - chili lemon peanuts - first time since mouth fixed!
D - insides of a McD grilled chicken club sandwich
S - HWC and frozen berries

I just happen to have a can here:
Ingredients: dried red chilies, shallot, garlic, soybean oil, sugar, salt, fresh turmeric, lemongrass, spices (corriander seed, curmin, cardamom, cinnamon, bay leaves, galangal, cloves), galangal, curry powder (whole mustard, funugreek, wheat flour, chili powder, fennel, black pepper), kaffir lime.

Wow! I have some of that stuff, but it's probably easier to buy the paste. Better yet, I should take him out to an Indian restaurant to ease him in. Thanks for the list! Sounds yummy!

B - cheese omelet
L - breast and thigh of chicken, 1 tbsp. coleslaw
S- pumpkin seeds
D -breadless ham and cheese sub, house salad
S - carb smart ice cream bar, sugar free caramel choc candy

House repair plans have stalled a bit as the family member we hired has overcommitted and can't come until hay cutting season is under control. I think we're going to try to do as much of the work ourselves as we can. There's family events with meals nearly every weekend for the next 6 weeks. Oro, I'm going to pack! No repeat of the past nonsense. I really want to lose 20 more lbs by August 18!!!
