A lazy day

Yeah, thanks guys. I think a straight up answer too is what is needed. I have to depend on myself to feed me right. If I can eat out, I can get a salad and meat most anywhere. People just don't really understand how eating flour or sugar cause physical pain.

B tuna and mayo, coffee w/ cream and CO, ACV water
L hot dogs and big salad, ACV water
S the last two cream cheese/almond meal cookies, sour cream w/diet jello
D cheese omelet, fried ham
S pumpkin seeds

At first, my written food diary pages filled a whole notebook page daily!
Now it barely takes up half a page. I know I'll eat something else before bed, but will try to keep LC.

Congrats on being that close to your birthday goal!

I'm treading water here and trying to keep an honest count on my carb count. My boyfriend says the scale is not working right, because it weighs him 60 pounds heavier than the doctor's office scale. So that's on the shopping list for next paycheck. My weight has stayed between 277 and 273 for quite awhile now.

Add 1 cup pumpkin with cocoa powder and CO plus 1/2 cup pumpkin seeds to yesterday's list for me. I think that puts me at 35 carbs. Trying again to hold on til payday.

Cauliflower Nacho Chips .2g carbs per chip yes, .2

These were too good not to share. As usual, I made some changes but either way they are a great, low-carb snack! I provided my spices though you could use any popcorn season mix sold in stores. Frontier has no sugar in their blends.

Cauliflower Nachos
Adapted from: LosinItNow
Glucomannan Recipes

1 Bag frozen cauliflower
1/2 Cup hot water (microwave 1-2 min)
1/2 tsp glucomannan
¾ TBL Hormel Bacon pieces

Spices:
½ C Chili Powder
2 T onion Powder
2 T Cumin
1 tsp Garlic Powder
1/2 tsp Paprika
¼ tsp salt
Mix together in Magic Bullet and use sprinkler lid.

Chips:
Cook Cauliflower, drain and puree in food processor. Set aside in a bowl.
Heat water, add to food processor, add ½ tsp glucomannan powder and process until well mixed and even.

Add the cauliflower back in, process until incorporated.

Heat oven to 350, then either spray cookie sheet or place parchment paper down on sheet and spritz with spray.

Drop spoonfuls of the mixture onto tray and then take the back of the spoon and smooth them into half dollar sized "chips". Try to make them as uniform as possible in size and thickness, so they will all cook evenly.

Bake for 35 minutes, check and flip and season if lightly brown around the edges.

Reduce oven to 300. Bake an additional 10-20 minutes, until they start to crisp up. There is a fine line from done, to burnt, so watch them the last 10 minutes!

Recipe makes 28 chips.
5.5g carbs per recipe
.2g carbs per chip

Enjoy the good life!

Trying my hardest to stay lowcarb this weekend. That's when i ususally blow it. but so far so good. My favorite new recipe is heavy cream and diet root beer! yummers.

B: Again my version of the mcgriddle. This seems to fill me up til almost after lunchtime. I have to force myself to eat lunch. Atkins Buttermilk pancake, one egg, slice of cheese and two turkey sausages.

L: mayo mixed with chicken breast in a can., string cheese

S: heavy whipping cream and root beer. about 5 asparagus, cold from the fridge.

D: not sure yet, took out the Manwich meal and ground beef yesterday but ended up at Sizzler. So looks lile i will be making that. Will probably put it on a bed of lettuce with cheese.

I'm at the end of liking asparagus.I made it two many times last week and have a container full. I hate when that happens.

Weigh in tomorrow at Curves. Hope i lost at least a pound. Otherwise i will have already stalled on induction. LOL> not worried yet.

thanks guys, im excited

just ate a ton of broccoli but i have been majorly cutting the veggies back so i dont feel too bad. of course my meal plan today was totally different then what i posted, like usual on weekends! but i ate on plan so its all good...i tried the HC and root beer, didnt 'get' it, i may sound like a ditz but could i be doing it wrong? i just poured and mixed, going to look it up now (as i imagine everyone reading this silently laughing)

chips sound yummy but i never seem to crave chips or salty snacks really its always the sweets, fried, or just plain ol' carby grains

Kind of like a root beer float? It's great when you can find something you really like.

This is the first time in weeks I've wanted something salty. Usually it's sweet, sweet, sweet. You can have broccoli. I only eat it when it's well disguised.

Are you making the cream into whipped cream with the root beer? I love root bear floats so that sounds exciting! Can you mix diet orange soda with HC to make a dreamsicle or orange julius? Now I'm thinking on all kinds of possibilities.

B bacon & eggs; coffee w CO and cream
L tuna & mayo; salad w/ pumpkin seeds and ranch
D LC pasta w/ tomato sauce & meatballs; decaf w/ cream & CO
S diet jello w/ cream cheese

If I'd had sparkling water or diet soda, it would have gone into the jello. One of my favorite desserts was 7Up salad w/ lime jello, pineapple, cream cheese, 7up, and pecans. That could easily become a LC meal. I would eat the whole bowl!

You guys give me some awesome meal ideas!

Or can you make a LC ice cream w/ HC? That would be great for a float!

Yes it's like a float. blend it with ice then pour a bit more root beer in at the end. Its all in the mind but it works. ohhh, a dreamsicle that would be so good. I will try it with orange one day. Remember HC has calories so use sparingly. But hits the spot when i feel i want something sweet for snack.

We're definitely getting new scales as soon as we have the $! I weighed somewhere around 273 to 275 this morning, but the scale kept moving the needle around.

I FEEL better and my clothes Definitely fit better, so I'll stay the course.

B 3 eggs and 2 hot dogs, coffee w/ CO, cream, and cinnamon
L 3 meatballs and 1/2 cup tomato sauce
D chicken stir fry (homemade and LC) He added rice to his plate
S -Atkins bar

I was offered a cheese puff, just one, and all I said 'No thanks, coz it's not worth how bad it makes me feel." And they understood.

Thanks guys for the advice!

Was wondering how many grams of fat do you eat in a day? And what sources do they come from?

I don't know about others but I don't track fat.
Yesterday I had Crab cole slaw on half an avocado.
Usually 2-3 T coconut oil
turkey sausage
hot Italian sausage
occasionally bacon or Jimmy Dean
had butter on my glucomannan hot cereal this morning

i dont track fat either. sometimes ill try and add a little fat if i feel like im stalling and cant think of any other reason, so ill have a real fatty meal. but daily tracking does not happen. even tracking tyhose carbs i barely do. the best part of atkins to me is NOT having to be obsessive about it- after you start to learn what foods you normally eat. i think mentally i set them in little categories- high carb (for me, like 10 carbs) and is saved for a dinner out or something, medium carbs which is my lunches and dinners, and low carb which is usually breakfast and snacks. once i kinda know what the counts are and keep those categories in mind, i dont need to count anything. some days i may go slightly over and some under but it makes this diet worth it!

ugh its that time to start my crazy day. have a great day everyone. maybe ill beback to post my meals

CELEBRATION~

The scale said 272 today!!!! First time it's definitely been below 275 in about 3 weeks of eating (mostly) on plan. I soooo want to be at 250 or below by my birthday the day before Halloween! When I started trying to shape up about 5 years ago, I was 305 pounds. Then I was teaching school and always stressed and wanted to change. I got very sick, had major surgery, and it took 6 months for the incision to close. I quit teaching, started making life changes, fell in love, and now.... 3 more pounds gone! You guys are a big part of that.

Sorry, I was just so excited!

B 3 eggs, 2 hot dogs, coffee w/ CO, ACV water
L big salad w/ ranch and spicy pumpkin seeds, deli roast beef
D Italian sausage, peppers, onions, salsa, cheese
S diet pudding made w/ HC

Every bite, every meal. I make the choices about what goes in my mouth.
We're going to visit friends/family on Saturday. I'm taking salad to share and maybe an Atkins bar just for me on the way home.
