Cheesy Cabbage Ground Beef is adapted from:
ALLIECAT'S CHEESY CHICKEN BACON CABBAGE CASSEROLE
My version: Note I used a half recipe and it still made 8 servings because of the sugar and carbs in the cabbage.
S/C/F/P/Cal= 3/5/1.4/12.5/275
1 tsp prepackaged cooked bacon (I used Hormel)
1/2 medium cabbage, chopped, about 18 ounces
1/2 small onion, chopped
1/2 green bell pepper, chopped
1T coconut oil
Salt and pepper, to taste
1 lb ground beef
1 cup Greek yogurt
4 ounces cheddar cheese, shredded
2 ounces cheddar cheese, shredded
Paprika
In a very large pot brown ground beef.
Add cabbage, onions and bell peppers until tender and wilted; season with salt and pepper.
Stir in Greek yogurt and 4 ounces of cheese.
Adjust the seasoning as needed.
Spread in a greased 9x13" baking pan.
Top with 2 ounces of cheese and sprinkle with paprika and bacon.
Bake at 350║ until golden brown and bubbly, about 20 minutes.
Let stand about 10 minutes before serving.
Makes about 8 servings
Do not freeze.


Mac and Cheese Cauliflower Hamburger is adapted from:
Stella Style Community - Recipes | Original Cauliflower Mac and Cheese Casserole
My version:
Reminds me of Hamburger Helper. What can I say, we grew up on packaged food. lol
Serves 4. Per serving:
S/C/F/P/Cal = 2.3/2/4/26/577
Butter flavored Vegetable oil spray
1 large head cauliflower, cut into small florets (10 oz frozen)
1/4 cup heavy cream
1 egg, beaten
2 ounces cream cheese, cut into small pieces
1 1/2 cups shredded sharp Cheddar cheese, plus 1/2 cup for topping the casserole
1 lb Ground Beef

1. Preheat the oven to 375░F. Spray an 8x8 baking dish with vegetable oil spray.

2. Microwave cauliflower until hot. Drain in a strainer, use a bowl to push out most of the water.
3. Brown beef and add to baking dish. When it cools, add beaten egg.

3. Transfer the cauliflower to the baking dish and set aside.

4. Bring the cream to a simmer in a small saucepan and then whisk in the cream cheese and continuously whisking until smooth.

5. Stir in the 1 1/2 cups of cheese and whisk just until the cheese melts, about 2 minutes. Remove the sauce from the heat, pour over the cauliflower, and stir all to combine.

6. Top with the remaining 1/2 cup cheese and bake until browned and bubbly hot, about 15 to 20 minutes. Let cool 5 minutes before serving.

Not a lot of changes but tweaked for me.

I picked up Deitz & Watson corned beef in the deli yesterday and looked at the label. 0 sugar and 0 carbs. Yay!

Taste and dispose of discreetly into your napkin. There's no need to swallow those carbs. You may have to ask for several napkins or bring a pack of Kleenex. <grin>

I do that at my MIL's. She makes the BEST apple pie. I take one bite, chew, savor, moan appreciatively, and spit.

Passion - glad that Chicken crust pizza worked out for you guys. I need to look up the deep dish one now. OK, as for me oro - I'd like to know more about that Hot Italian Sausage Tomato Alfredo and Jenni-O Mild Sausage in Poblano Sauce.

Ohh, what happened - melty kinda mess? Yeah, get parchment paper - worked like a dream.

OK, mug muffins. I found a few recipes - I did not make them up first one was good:

1/4 cup Flax Meal
1/2 teaspoon Baking Powder
1 packet Splenda
1 teaspoon Cinamon
1 Egg
1-2 teaspoons Butter

1.5 Carbs (the author had this calculation) - my flax says 6 carbs per 2.5 tblsp. Anyway, you can cut the muffin in half and share which is what we did.

Mix the dry ingredients in a large coffe cup. Add egg and butter; mix well. Microwave for 50-seconds to 1-minute. Muffin pops right out.

Slice in half and butter or use cream cheese frostening.

Then I found this one yesterday and made two - one for me and one for Hubs, they are so filling too. I actually saved some from b'fast as I got too full.

1/4 cup almond meal
1/2 tsp baking powder
1/2 tsp cinnamon
1 egg
1 tblsp CO/ or butter
1-3 tblsp Davinci caramel syrup sweetner (but any sweetner will do) may not have a French Toast effect though. They make a pancake maple that will soon be on order. I used 1 tblsp as I don't like real sweet stuff all the time.

I mixed the wet and added to the dry in a wide mug - mix all together (but you can just build it all in the mug to start with.) Nuke for a minute or so and voila! Hot French toastesque mug muffin. It can be cut in half and placed into a toaster or under a broiler if using it later (good cold too.) Some do savory too... basic muffin with like oregano and parm cheese, that kind of thing, Some do any instant b'fast for out the door with bits of sausage and cheese in the muffin. I've seen pumpkin spice ones - I guess sky's the limit with them.

I calculate 4.5 carbs - less of course if you share.

Capri, those sound fabulous! Question: What section of the store can one find flax and or almond meal?

ETA: re: waxed paper: The yummy crust stuck to the waxed paper. I was HUGELY disappointed, too, because the house smelled wonderful, and the pizza came out pefect.

Well, I bought mine here at Netrition (look above to the right - Host site I think.) Heck, I'd call my grocery first to ask if they had it. Publix had a special thing for that kind of stuff in the middle of the oil or flour aisle - something like that. But, I find the prices at Netrition to be good and shipping is not an arm and a leg. Not for the LC pasta though - it was less expensive at the local stores.

Maybe a vitamin store or a health food store too. Call around first.

Today I had,
4T peanut butter unsweetened
3T coconut oil
Handful pecans and macadamias
Salad of spinach, lettuce, cucumber, picked onions, pine nuts and hemp oils
2 squares xylitol dark chocolate

I know nuts are not an induction food, but I'm doing a modified induction as I am a vegan.

ooo a vegan on atkins- ill be interested in seeing the different menu choices to bring some variety. i allow myself 100 cal pack nuts ever so often just to have something different. plus it makes me feel like im eating healthy when i eat them and thanks for the recipe posting, good to have some new ideas and i have ground beef defrosting now...

ok ok im sick of not having certain recipes bc i never buy flax or almond meal. so i will experiment with one of them- for all you foodies, which do you think will provide me with more recipe choices? im sure ill find recipes for either... but that french toast idea sounds amazing!

the napkin idea i may be a little too shy to do that... plus it reminds me of that seinfeld episode hahaha but alas the restaurant trip got rescheduled for thursday so its delayed until after my weigh in yaaay!

Passion68: Bob's Red Mill has flaxseeds in the flour aisle at the Safeway here. I get them online because it's cheaper to buy bulk.

CapriCapers and all: Be very careful of "low carb" pasta unless you can test your glucose. I'm "lucky" enough that when my glucose raises my fingers get hot and tingly. 20 minutes after eating DF pasta this occurred. I checked my glucose and it was 150. Before my meal it was 83. I know it's ok for some, but if you're not losing weight and you're eating LC pasta on a regular basis, a spike in glucose may be why.

WoW - not good! I have not prepared any yet - a serving is way high for my liking just now. But, I have it all the same. Tingly fingers? I don't like the sound of that :<

I guess, I'll say almond meal. That's different than almond flour. Almond meal is darker as it still has the skin on the nut. The other is a blanched version I gather and is more a bit more $ as it is labor intensive to make is my guess. So yeah, if getting just one thing for starters - I say almond meal ($4-5) it is a lot smaller bag than the flax meal (at least my two in comparison) it will go faster if you want to use it up. You can dust fish with it and sautee - like I did with pecan meal. If taking a long time using it up - I say ziplock bag and into the frig or freezer. But the flax is around the same price point - so not bad to have both really. Both are very good for you. I have read one person say almond meal stalled her - but that was one person, so far - awhile ago.

Take a look at this site - I just found it and it looks so amazing.

She has recipes for almond flour and LOADS of other things.

And, I am a low-carber who refuses to eat whole wheat pasta, brown rice or anything. I know some of my friends are like: Oh, whole wheat is good for you or brown rice is okay. No, it's not.

booo restaurant trip got pushed to thursday! good news is im down another pound (and on TOM!)

excited about trying the cauliflower garlic sticks (i think that was on this thread?) plus last time i made mock shepherds pie it was amazing so im already craving it again...so i better stock up on my cauliflower!

D- cheesy broccoli with ground beef (or maybe oro's mac&cheese cauliflower burger if i can get my butt to the store to get some cauliflower!)


excited about trying the cauliflower garlic sticks (i think that was on this thread?) plus last time i made mock shepherds pie it was amazing so im already craving it again...so i better stock up on my cauliflower!
Cauliflower is my new favorite vegetable. I seem to put it in everything.

Oh the shame.....ate way too much today and probably not done as I just got back from body pump and am starving! Someone give me a virtual slap please?

Hot chocolate made with coconut milk, coconut oil and sweetened with stevia
Handful of pecans
Shiritaki noodles with spinach, artichoke,fennel, pesto, loads of oil, and brazil nuts
About 2 tbsp of peanut butter and 1 tbsp hazelnut butter straight off the spoon!

plus way too many tastes of the Lc coconut ice cream and hazelnut white chocolate I was making (both made of just nuts/coconut/fat/stevia)

By the way, I realise nuts are not allowed on induction but I am a vegan so had to adapt the plan a bit.

I love the amylu carmelized chicken burger with red pepper and gouda cheese. Perfect 150 cal and all the flavors. Easy when i don't want to cook.

B: 2 eggs over easy, 2 turkey sausage patty
S1: 3 slices tomato with 1/4 motzarella cheese melted in broiler
L: Angus frozen fully cooked hamburger patty with 1T chipotle mayo 2 tomato slices, 1 kraft american cheese slice on top and wrapped in 3 romaine leaves.
S2: pork chop aprox. 3 oz - made these a few days ago and don't want them to go bad.
1 root beer float from Atkins.com
D: 1 chicken breast with slice of ham and provolone cheese on top or in middle haven't made them yet. kinda like cordon bleu. 7-10 asparagus on the side.
S3: only if i feel i need something sweet - 1 quarter of minute muffin pumpkin recipe. i made a few and quartered them up so i can have a bite if i feel i need something.

I increased my protein today since last night i felt hungry. Usually this works. yesterday was a shake etc. maybe not enough food.
