Had to run back in to say OH BABY! is this "Chinese Fried Rice" ever a keeper!!

Instead of eggs I used Extra Firm Tofu that I had prepared a couple days ago (sections fried in CO.) Added a few carrot matchsticks and a few pine nuts... so few I'll have to look for them. I wanted to add thyme (a favorite) but that's for next time. It was done with some crock pot roast beef, next batch will be chicken. I'm chomin' at the bit to do the bisque!

Hope you like it LJ! I think I'll bump up the cauli next time - wonder what that cauli is like just shredded (used a Cuisinart - so it was pretty fine particles) and cooked with CO or butter. Gonna try it as I have a lot of cauli left to go.

Yesterday's plan:
B: 2.5 eggs acrambled in CO with chopped thick cut bacon coffee w/ 1.0 tsp lt cream
L: Deviled egg (had put too much pickle juice in the yolk mixture day before and tossing in Chia seeds made it perfect as Chia gels and absorbs liquid. May just keep adding Chia to them in future too - fab Omega 3s) Tiny salad. Piece of thick cut bacon
D: Mock Chinese Stir Fry Rice - the rest of the lunch salad.
S: Deviled egg one peice of Boar's Head Horseradish Chedder

Pushing water - but no where near 124 or 125 oz?! WoW

B: 1 O.M. beef bologna fried 2.5 eggs scrambled placed w/in & 1/2 chorizo banger, 1/2 mug muffin, coffee w/ CO
L: Deviled egg, celery dipped in ranch 2 oz Hoop chedder
D: Cauli Bisque, cajun chicken & fontina cheese lettuce roll ups w/ 2 tblsp of Pace salsa & sour cream

More water than yesterday and I did about 60 oz

LJ, I'm sitting here with the cauli-bisque and it is wonderful! That stick immersion blender is great (came in handy) but a regular blender would work too. Even with a chunkier style it wuld be fab. I tweaked it ever so slightly with a pinch or three of nutmeg. It was fantastic before the cream was even added.

Yet another cook day for moi. So, I'm now back with a slice of this - A-mazing PIZZA!!! I had better call dinner a miss, with all this testing and tasting - scale will be ugly tomm if I keep on.

But anyway - THIS is worth trying. I used a Cuisinart to make the 'dough.' Spoiler alert! Cooked chicken breast and mozzeralla cheese -1 packed cup of each into a crumbled mixture, parchment paper on a cookie sheet - the rest is up to you. It makes breadsticks too.

I did a portabella mushroom, Canadian bacon, mozzy cheese using that spaghetti sauce I mentioned the other day from Walmart.

Hello all.
Have been missing for a while, but am back and ready to get this losing on the road. I have done low carb and have lost around 40# and need to lose another 10-15. I recently went off program and gained back 5#. My goal for March is to lose 5-10# by doing low carb and calorie counting.
Today's menu:
B - coffee
L - Tilapia & spinach salad
D - Chicken

I am so agitated tonight. Everything is irritating me. I'm really just realizing how I use carby foods to medicate myself!! I guess this is the psychological part of weight loss! I used to have a great recipe for a "tollhouse chocolate chip cookie". It was very good. It used almond meal/flour. Anyone know it? I know that it is still treating my emotions with food...but it may save someone in this house's life!!

No, but I Googled and found this:

Don't make these if you are on induction or if cookies are
included on your trigger food list (if you have one) or if you
can't eat just one.

And, for JC, these technically are not low carb [ ] So,
here goes.

1 Stick butter 1 cup Splenda 1 Egg
1/2 tsp vanilla
2/2 tsp cream 1 1/2 cups almond flour
3/8 tsp salt
4/4 tsp baking powder 1-2 Low-carb chocolate bar(s)

Preheat oven to 350 degrees F. Cream softened butter, then add
Splenda and mix until light and fluffy. Add egg, vanilla and
cream and mix well. In a separate bowl, mix almond flour, salt
and baking powder, then mix into wet mixture. Crush or
otherwise break into pieces the chocolate bar(s) and fold
pieces into the dough. Pour into a greased baking dish (I used
two 7 1/2 x 5 1/2 dishes) and bake uncovered for 25-20
minutes.

Tracy's Toll House Cake

Ingredients:
2 cups almond meal
1 cup softened butter
5 whole eggs
3/4 cups Splenda
1/4 cup Brown Sugar Twin
1 tsp Baking Powder
1/2 tsp salt
2 tsp vanilla
1/2 cup sugar free chocolate chips

Directions:
Preheat oven to 350 degrees
In a mixing bowl cream the butter and the "sugars"
Add eggs one at a time mixing well with each egg.
Add almond meal, salt, baking powder and vanilla and mix well.
Add the sugar free chocolate chips.
Grease or spray with Pam a non stick bread pan. Flatten cake mixture into
pan. Bake for 50 minutes. Cool completely, preferably in the refrigerator.
Take the bread out of the pan and slice the cake down the center lengthwise
and then into 12 slices per length to end up with 24 "half" slices at 2.4gm
carb per slice. To stretch even further drop by teaspoonfuls onto a greased
cookie sheet and flatten out a bit, bake 8 or 9 minutes at 350.
Total carbs per recipe: 100

p.s. please don't eat the raw '"dough" there are too many raw eggs for my
taste to be considered safe! if you are looking for a cookie dough
experience ask and I will tell you an awesome recipe with no eggs!

It's all good - just a texture thing in the end anyway (and maybe thickness) it'll taste just a delish. Try mincing it up as fine as you can on a cutting board.

I'm gonna do this right now! DH is a Cookie Monster and I feel bad there is none to offer him. Can these be baked? I'm going to use Ghirardelli 86% candies. Bought a huge bag at BJ's of Ghirardelli the other day. All it has is three percentages of dark chocolate squares 60% - 72% and 86% cocoa. Can you tell me about your Chia b'fast bowl?

Not my favorite Hershey bar! or M&Ms <3 but can be considered a health food at those cocoa percentages. Only 20 carbs for four of them too. So far, I've only split one with Hubs.

Adapted from:
30 Second Raw Chocolate Chip Cookie Dough (Gluten/Dairy/Grain/Starch/Egg /Soy Free/ Low Sugar) | Real Sustenance

1 Cup blanched Almond Flour
1 Tsp Vanilla Extract

1 T sf Hershey choc chips
1 T chia seeds
3 walnuts, broken into small pieces
3 second squirt of Redi-whip

I didn't write down where I got this one.
I don't use the whipped cream (it doesn't need it) and I add 6 drops hazelnut Stevia liquid.
Mix all together and enjoy.

Success!

They did bake (left in until choco melted) 350 ish on release foil. They are very delicate, but great!

That dough part would make a fab pie/tart crust. I only had unblanched almond flour - I'll try again when I get the blanched.

Good adaptation oro - thank you. LJ - try this one.

D: Went 'off the reservation' as an experiment this time. Went to Beef O'Brady's (family sports bar kind of place.) Hubs and I shared the Chili Cheese Dip & Chips I know I know - it's all for science kids lol. He ordered the 3 Steak Tacos basket (and ate one - brought two home) and I went with the Steak Bowl (not so good as there was very litle meat and 3/4 some kind of minute rice stuff - I ate the 1/2 the meat (brought 1/2 home) and had unsweetened ice tea. So, we'll see what that does to the scale (chips were too too tooooo salty!) We're thinking as this diet will be a LONG haul - going off plan once every weekend or every other weekend may be OK. I wonder if I can do a clean Induction M-F and lessen the reins on the weekend. That is what this trial and error will be about. I may serve as the poster child for DON"T DO THIS! If I shoot up the scale tommorrow - it's back to total LC though.

mom-in-law made dinner tonight (remember the fabulous southern cook?) tonight she made a tasty chili with baked potatos (cheese and sour cream on the side) and warm rice pudding for dessert. I just did not want all the carbs as tomorrow is weigh in day so i picked all the hamburger out of the chilli and left the beans. It was a little ridiculous, I know, but I want to hit the 230's this week. I didnt even walk by the rice pudding!!t

weigh in day and I'm at only down .4! .4!!!! what the heck!!!. Not a good way to start the day~ Anyone have any idea? I posted my meals all week with carb count. I've drank my water till my teeth floated.

My only thought is that maybe because it's "that time o' the month"?

My first guess is you seem to be under a bit of stress this week (longer?) Hun. That never plays well with weight loss from what I've heard.

Also, sometimes (often times sad to say) the scale does not move due to that theory of the water moving into vacated fat cells as a place holder. When the fat does not return to those cells - the body releases the water too. Judge by how clothes are fitting - and some tape themsleves to compare inches week to week. Then, there is the healthy schedule of elimination to consider, weaing the same clothing each time you weigh - all that.

Most of my extra stress has been period-related. I usually don't have much PMS (or in this case D(uring)MS!!) but this week I was agitated with everything!! I'm not used to feeling that way..I did not like it! But like i posted before, i think I always dealt with negative emotions by smothering them with sweet/hi carby feel good foods (aka happy fat chick syndrome). I guess I'm gonna have to learn how to deal with them another way. I'm going to add in some exercise this week. especially since I went back to my normal desk job this week instead of being out and about to all the hospitals like i've been doing for the last month.

OK I'm brushing this off....it's still down instead of up.... Gonna make a plan cuz...wait for it.....I'm PLANNNG to LOSE!!

p.s.I do notice I am holding water this morning. My fingers are a little puffy...I think I will do measurements. Thanks Cap!
