Cap you gave me an idea with that fried rice.. You could have "oriental night"

fried rice, egg drop soup, mooshoo beef, and egg foo yung, serve green tea and a bowl of rice for the hi carbers Then to really make it fun... sit on a pillow at the coffee table!! I love it!! so will the kid,,,the hubster will look at me like i"m nuts

Yep, do a lil armchair traveling via dinner... break out the chop sticks, I like that idea! Then look at the globe or map and talk about where the meals came from (in general.) That's learning the fun way - What a great Mommy you must be!!

~ Here's one version of the cauli 'rice':

Chinese Fried "Rice"
Ingredients:
1/2 head raw cauliflower, (grated to make 3 1/2 cups)
3 green onions
1 clove garlic, minced or 1/2 tsp garlic powder

3 Tablespoons Soy Sauce
3 eggs, beaten
Olive Oil

— Any mixture, your choice.

In a wok or large flat skillet, heat enough oil to cover the bottom. Fry minced garlic (or garlic powder) with finely diced white part of onions for approximately 1 minute. Add grated cauliflower and fry for 4-5 minutes, stirring constantly. Add soy, ginger, diced green onion tops, and pre-cooked cubed meat or baby shrimp. Stir to mix well and brown a bit. Push mixture to one side of pan. Add more oil if necessary and scramble eggs in empty side of pan until done but still moist. Stir eggs into "rice" mix and remove from heat.

Serves 3-4. 5-7 net grams of carbohydrate per serving. Stores and re-heats beautifully.

NOTE: For an additional 6 grams for the entire recipe, try adding 1/2 cup frozen green peas (about 2 minutes after adding cauliflower.) It adds great flavor and richness to the dish!
Indeed, spent the last 2 hours perusing. What fun!

I second recipe for Cauliflower Bisque. t sounds interesting.

I would add sesame oil to the Fried "Rice". It looks good.

My day meals changed, as usual. I ended up with:

had a weekend away with the family and came back to a weight loss! so im happy. the only problem is, i dont have a plan for today since we are trying to get back into the swing of things (you should see the state of our house :::shudder:: ill brainstorm on the way to school i guess

definitely liking that cauliflower bisque idea! maybe dinner tonight? who has tried it yet?

Atkins shake in freezer - i like it to get thick like a milkshake. will drink in about an hour.

Portabella Pizzas, sauce above with shredded chicken smoothered in mozzy cheese.

okay! well my day so far:

B- coffee w/ HC & 2 splendas (stop measuring HC, im pretty good at guessing now, and that was annoying )
B- cheesestick

L- lettuce wrap with mayo, swiss cheese, and corned beef

D- broccoli, steak, sausage stir fry in low Sodium beef broth (new recipe, nothing special)


of course its now 5 and i just finished dinner so needless to say, i shall need some snacks in a bit kinda skipped breakfast so itll be eggs im sure

i dont have a stick blender- will it work without you think? and when i make mashed cauliflower i just use the bottom of a big cup and mash it in the pot im a kitchen nightmare!

wow 20 carbs go fast!! Think I'm gonna cook up a protein snack for tomorrow I really got hungry this morning between breakfast and lunch. I have some shrimp..maybe I'll boil a few.

The white castle pie is very tasty. the husbter even liked it. (Of course I made such a fuss last night about their pickiness with dinner they are probably afraid to say anything negative..heeheehee!) But its not very much if you are really hungry!!

My bff (are you supposed to use that when you are 41?) came back to work after 2 weeks gone and immediately said "you've lost weight". How she can tell is beyond me. It generally takes over 20#'s too even really start seeing the loss on me. I told her I had to get a head start on her since she's getting the gastric sleeve. Very glad I'm over the jealous thing. Ya'll really helped me out with that one.

Ahh Cool!!

I went to make it today (another cook day - takes a long time to fry up six pounds of thick cut bacon) but realized I did not have scallions . It's on my shop list and can't wait - it looks delish - the bisque called for green onions too - so I was stymied.

I'm so happy it worked out

Ohh, then I'm all set! I'll use the skillet as soon as the bacon is done it has that thick cooked on coating of bacony goodness on the bottom. I have two vidalias but did not want to use 'em as they have carbs, shame as I love onions.
