It was a good catch on your part. Many people (like myself) forget that it is supposed to be induction level foods as described in the Atkins program.

I will try that too. I had never tried Parm on my eggs before, and now I love it. No need for salt or any extra seasoning if in a hurry...

I have a hard time losing, so doing basic again, and the pics you post give me MAJOR ideas and have helped me ALOT.
Thanks

** Mozarella Caprese & Chocolate Raspberry Mousse **

** Mozarella Caprese & Chocolate Raspberry Mousse **

I had to go to a PTA event where they were serving food. We also had the option to bring some snacks. I thought this was a great idea, since they usually have pizza and cookies there!!!
So I decided to make things that I make for my young kids which are healthy and low carb.

Mozarella Caprese...each large mozarella ball is about 6g carbs, which gives about 4 slices. So you can eat 4 of these with the peppers or tomatoes for a total of 10g carbs

Chocolate Raspberry Mousse...made with pureed avocado, unsweetened cocoa powder and stevia...topped off with raspberries...5g carbs per cup.

The potato skin is mashed cauliflower I'll post recipe at one of my places tonight so check them. They were worth the 3 heads of cauliflower I threw out trying to get them right.

I get so lucky in the Franks department. I work at Reckitt Benckeiser... one of our plants makes it so I buy it by the gallon! Love it!

Pork rinds (Old Dutch brand), cheddar and Mozza, tomatoes, green onions, avocado, salsa and sour cream. It was amazeball
