This soup is called "sopa azteca" in Latin America. Really wish I'd snapped a photo of it last night!
It's a hit w/ my non-LC husband -- I make crunchy corn tortilla strips for him on the side. Some white rice wd be nice in it too. I've been making it about 2-3 times a week: so fresh, so complex, so satisfying! Plus the broth really helped my nasty Induction tiredness.

Olive's LC Sopa Azteca Recipe (for 2)

Ingredients for soup:
2 cups chicken broth
2 large fresh tomatoes, quartered (you can make it with canned but not as good IMO)
1 large onion, quartered
2 garlic cloves, rough chop
1/2 cup shredded chicken
2 Tbsp butter
Pinch red pepper flakes
1 tsp ground cumin
1 tsp oregano
2 tsps pepper
1 Tbs salt
1/2 lime
(Optional: 1 Tbp cilantro. Some people hate it)

Toppings:
Sliced avocado or a dollop of guacamole
Sour cream
Shredded cheese
Jalapeño slices
Finely diced tomatoes or onions

Prep:
Heat butter in big, deep saucepan. Toss all ingredients EXCEPT chicken broth and lime in and cook over medium-high heat until slightly caramelized (10-15 minutes). Then blend in a blender for 1 minute on high. Strain if you prefer smooth texture (recommended). Transfer to soup pot over medium-high heat and add chicken broth, allow to bubble and then add lime juice. Lower heat to simmer. Taste and add salt/pepper as needed. Add shredded chicken at the end just to heat through. Serve with favorite toppings.

I was craving a rueben so threw some layers of pastrami, sourkraut, and provolone into the oven at 350 until bubbly. Served over romaine with a splenda sweetened Mayo / grey poupon dressing...easy and soooo good!

I don't have a picture but here's my recipe for a Reuben dip. I serve it with triscuits but I eat it plain.

Rueben Dip
1 lb. shredded deli corned beef
1 lb. shredded Swiss cheese
8 oz. shredded cheddar cheese
8 oz. shredded mozzarella cheese
14 oz. can sauerkraut, rinsed and drained
2 cups thousand island dressing (I make my own low carb dressing with heinz's low carb ketchup)

Mix all ingredients together and pour into 9x13 baking dish. Bake for 35-40 minutes at 350 degrees.

Here you go

You Won't Believe it's Cauliflower Pizza Crust By: Cleochatra

1 cup cooked, riced cauliflower. 1 egg 1 cup mozzarella cheese 1/2 tsp fennel 1 tsp oregano 2 tsp parsley

Pizza sauce, lowest sugar you can find. Pep, sausage, onions and mozzarella cheese. *Toppings of your choice.

Preheat oven to 450 degrees.

In a medium bowl, combine cauliflower, egg and mozzarella. Press evenly on the pan, I use parchment paper as it does not stick. You can spray a tin with Pam if you like also. Sprinkle prior to baking the crust evenly with fennel, oregano and parsley.

Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe). This should be golden brown or dark brown.

Remove the pan from the oven. To the crust, add sauce, then toppings and cheese.

Place under a broiler at high heat just until cheese is melted.

Thanks! Just made chicken broccoli Alfredo with what I had in the house and it was delicious! Will make again. Here's what I conjured it up with:

1 large chicken thigh diced up (mine was already cooked in fridge)
1 cup broccoli chopped
1/4 onion
1 tbsp minced garlic
2 tbsp butter
1 egg
1/4 cup hwc
Parmesan

I sautéed onions and garlic w/ one tbsp butter
Added chicken
Added broccoli and another tbsp butter covered for 5 min
Added egg/hwc then parm to suit, mixed that and cooked for another couple minutes
Added some garlic salt/pepper/cayenne pepper too

Breakfast w parents, meat lovers omelette w shrooms and extra bacon

Breakfast last week, scrambled eggs with baby spinach, parm, feta, and avocado w red onions and mushrooms on side

The only toasted seaweed roll Walmart had. I'd recommend something else, it was pretty tough. 1 carb per sheet.

The other day I opened my fridge and had to laugh at all the low carb items I had in in. I was a busy little bee that week!

May I present: My low-carb fridge



1. butter
2. low carb cheese sauce
3. low carb tomato sauce
4. cheddar cheese
5. low carb meatballs
6. sour cream
7. low carb mac & cheese & broccoli casserole made with shirataki noodles
8. organic baby spinach (you can barely see the number!)
9. leftover steak
10. low carb praline cheesecake with english toffee whipped cream topping
11. craploads of free-run eggs!
12. raw hamburger to be cooked
13. in drawer: cauliflower & zucchini
14. in drawer: broccoli & cucumber

It was a yummy week of eating!

Wow, can I come for leftovers? That all sounds amazing! Especially the cheesecake. Where can I find that recipe?

Do I see some Imperial margarine and I Can't Believe It's Not Butter containers? Hopefully they are just empty containers for more healthy leftovers!

2 HB eggs, 2 tbsp spicy avocado, 1 serv chopped almonds
1 can tuna, 2 tbsp chia seeds, parm, and almond milk w/ a lil hwc and hazelnut sf[IMG][/IMG]

I think that's it! Oh, and ranch.

I just made a really good meal for me...... not like all the wonderful y'all make, but I enjoyed it..

made a Cornish hen in my NuWave oven
then I steamed some cauliflower then in a small fry pan... I had butter, some HWC, some Parm cheese and some shredded cheese - some spics got it hot and creamy and then added my cauliflower......it was soooo good... simple but good.....

So I just gave it a try. All good except the crust got a little soggy. I prob didn't cook long enough. It was still overall delicious. Added a few more spices and a tsp of minced garlic to it also.

Pepperoni, bo, mushrooms, spinach, and a lil mozzarella

Way to go!! Looks amazing I have to say the parchment paper *not waxed paper* Works like a charm! It really makes it brown up evenly. You might try a thinner crust if it did not cook well in the center, spread it out a bit more.

Looks wonderful!! All kinds of wonderful things you can make with this, and yes I too have a love for garlic, mmmmm!!! Olive oil and Garlic and Bree, oh my!!

Thanks! I will try that on my next one, I figured it might have been a lil too thick towards center. I'm gonna try my white garlic pizza soon. Garlic, onions, special white sauce, and maybe some chicken! You'll all see that pic when it happens!

I can't link to the recipe, it's from another website. :/ It's delicious though!

The margarines are full, lol. I don't know why I hang on to them Old habits!

I made cauliflower pizza for the first time tonight, and it was awesome! Making sure your "dough " isn't too thick in the middle is key. Also, I flipped mine after the recommended cooking time and baked linger to crisp the sucker up.

This white pizza you speak of? Do tell!
