Dinner last night...low carb coleslaw and beer brats. So good!
Please ignore the carrot in this...not induction friendly. Dill LC Coleslaw: ![]() And the brats and coleslaw on my plate... ![]() had the same thing for lunch, great leftovers!! I have two pork tenderloins smothered in salt, garlic, olive oil and herbs marinating in the fridge for DH to grill up tonight.. Can't wait! Had to get two since DS (9 yrs old) will eat almost one on his own... ![]() |

Asiago~Yum! Luv Brats and Slaw. Think I'll make up a batch this wknd to go w/my Ribs.
2 Porkers between 3 peeps! Wow! I usually roast mine. I've never tried one on the Barbie. Do you use a gas or charcoal grill and how long does DH grill his Porkers? Does he use foil to hold in the juices? Just wondering. Last edited by Rbenz; 05-26-2011 at 01:36 PM.. |

Hi!
I put about 1/2 c. real mayonnaise in a large bowl. Then I added a few tablespoons each of apple cider vinegar and red wine vinegar, 3 packets splenda, celery salt, fresh cracked pepper, a squirt of yellow mustard and some fresh chopped dill and stirred with a fork to taste. I pretty much tasted after I added each item until the sauce tasted like a nice sweet coleslaw and not mayonnaisy. Once I liked it, I mixed up a full bag of coleslaw mix - shredded green cabbage and a little carrot. It was great an hour later at dinner and even better for lunch today! |

Dinner tonight...
At lunch today, I mixed minced garlic, kosher salt, cracked pepper, red wine vinegar, olive oil and fresh rosemary, sage and thyme. Then I schmeared the whole mess on two 1 lb pork tenderloins and let marinate until 6:00 tonight. DH grilled them up and we had parmesan broccoli again (plain broc for picky DS). I have never used this marinade before - got it in a new outdoor cookbook "Get Fired Up!" by the Deen Brothers - and it was amazingly tender and good. Definitely a do over! After letting it rest and slicing: ![]() My plate: ![]() We ate outside on the deck and it was a very pleasant meal together! |

Asiago~Thx. I was wondering about the foil part.
We have a gas grill too. I'll try the grill next time.Not going to do anything to this rack of ribs. I'm buying them already Cooked! :blush:Problem is...they come covered w/a too sweet of a sauce on them. So...I rinse/rub the sauce off the rack when I get home and then add my own. ![]() |

At Trader Joe's and the nutritionals souind great for low carbing. 1/2 c. serving = 8 gm car, minus 5 gram fiber which only leaves 3 gm carb and 10 gram protein. |
