Went home at lunch to check on my soup...tasted awesome but it was runny..added some more cream and cheese..I think it's been mentioned,but it'll thicken up when it cools right? put it on warm till 4 when I can get back and take it out completely.

Cream Cheese Muffins



Was feeling motivated last night! I am doing induction again and made these for quick snacks! The hard part you ask??? Not eating 6 at once just to try them! REALLY should have thought this through!

Base Recipe-
2- 8oz packages of Cream Cheese
2T Greek Yogurt
1 egg Yolk
2 Eggs
I didn't add sweetener to the base- some flavorings had their own sweetener, but did add EZ-Sweetz to the ones that needed it.

L-R
Peanut Butter Muffins- With Watkins brand PB flavoring (not my fav- tastes a little like PB but mostly like chemical smoke) Bummer!

Butter Pecan- with Lorann Flavor Fountains (they have the pecans on top) OK pretty mild in flavor. I will try them again -it could be from my sinuses, allergies for me.

Cinnamon dolce- with Capella drops. Yuck- didn't like them AT ALL! I may have put too many drops in. Took one little bite and threw them away!

Chocolate Chip Cookie Dough- I thought these had a very nice flavor- first time I have used the syrup.

Raspberry- Very good, first time I have used this in cheesecakes. Torani brand.

The 2 you see in front are Coconut Lime on the bottom and Raspberry on top (I was running out of batter)

Coconut Lime- Target brand Lime Margarita Mix and coconut flavoring- McCormick. VERY GOOD!!!! With the Margarita Mix they taste like Coconut Key Lime Pie!!!.

I also made cream cheese clouds with the margarita mix! Very good- I will add coconut flakes next time!

Shrimp with Chive and Onion Cream Cheese and home made Cocktail with SF Ketchup! YUMMY!

My mom used to serve something similar on Ritz Crackers! But no need for crackers here!

I am starting back on induction and needed the inspiration, I am so stuck, I feel like I am never going to get under 200 pounds, for 2 months it is up and down the same 5 pounds, I think a good run of VLC might move it now. I know those shrimp with the ritz crackers, my Mom used to make them, ughggh that looks so yummy!!!!!

You could totally go without the nightshades. I know they're problematic for many. I added minced nightshades, garlic and onion to the cream cheese.

I put a circle of shredded cheese on a piece of wax paper, nuke it in the microwave until the cheese gets hard and crispy, then lay it over a bowl (that has a napkin over it to absorb any grease that drips off) until it cools and hardens into it's shape. Easy peasy. You can make a deeper taco bowl by using a taller and skinnier shaped item to lay it over to mold over also.
