I made some crack slaw for dinner tonight and I have some hobo burgers in the oven for tomorrow. I'll post pics of those later. To make the burgers I season a lb of hamburger with my burger seasoning (steak seasoning, garlic powder, onion powder, paprika) and a few dashes of hot sauce-I put that on everything. Layer some onions and bell peppers on top and drizzle with olive oil. Wrap in foil and bake at 350 for 30ish mins or in a crockpot on low 6 hours. If you bake them you dont have to wrap in foil. They are soooooo good!! Especially with loaded broccoli (butter, sour cream, bacon bits, and shredded cheese) yum!!

Hiya. If you google "Your Lighter Side" and then scroll down the Cinco De Mayo, it's the enchiladas and rice recipes. (these are Cleochatra's recipes)
The only thing I did differently was add chicken thigh meat to the cheese for stuffing the enchiladas. So good! |

I had to use fresh diced onions to like it, the soup mix just didn't do it for me. I know it uses soup mix to give the white castle taste, but I've never been anywhere near one to try them so I don't know any better!

I'm new. Just started last Monday. This thread has given me a lot of ideas

But hubby was craving something with texture and he is a "sweets" person. I always joke that Little Debbie is his mistress. But it was better then letting him in the kids banana bread. |

I just realized why I keep coming back to this thread, even though I'm way out of induction.
One, I'm not interested any of the million low carb knock offs of high carb sweets that flood the recipe board. I want real food recipes, something I can make a meal out of! Two, I'm also not interested in buying 20 different kinds of sweeteners, 10 different kinds of 'flours' (things like carbquick, wheat isolate, etc) - that also are included in the majority of the things posted in the recipe board. That stuff gets expensive, and I can't justify spending $9 on 1lb of almond flour (just one example!)

It's all about the basics. Solid foundations. Life, liberty and the pursuit of porn rind and cauliflower bases. Though not necessarily together... Here is one of my latest faves. My meatballs with pan-cooked zucchini and my marinara. So freaking easy and delicious. |

You're welcome! I am a baker at heart, so whenever I can find a substitute to help others, I do it. I want everyone to feel like a success in the kitchen, and it starts with the basics. To me, a sweetened, condensed milk recipe for low carbers is one of those basics. I'm so glad you like it!

Yummy chewy little cookie that is so good. It like a cross between a macaroon and a meringue cookie!
Ingredients: 2 egg whites 1/2 tsp cream of tarter 1/4 tsp Almond extract 2 tbs agave necter 2 packets splenda 1/2 cup unsweetened coconut flakes or shredded How To Prepare: Combine all ingredients except for the coconut in mixer. Mix on high speed for 2-3 min until stiff peaks form. Fold in coconut. Drop by spoonfuls onto parchement/ baking paper that has been sprayed with nonstick spray. (I used foil with spray and they stuck). Back in warm oven 150-175 for 1 1/2 hours. The cookies are done when they are dry when you touch them. Let cool before trying to remove from paper. |
