I made the yummiest dinner tonight! It doesn't have a name because i just threw it together. Cook 1 lb of hamburger with some onions and celery, season with salt and pepper. When brown, drain the fat and cook zucchini, bell pepper, mushrooms-whatever veg you like. I sauteed in butter and garlic, then added a tomato, oregano, salt, pepper and garlic powder. Added the hamburger back and mixed with some shredded cheddar cheese. Sooooo good. I topped mine off with some hot sauce and parm cheese. Even my non lc husb loved this. Sorry theres no pics, we ate it all!

BTW, I'm Sarah and I'm new here. I thought I'd contribute something because yall have given me so many ideas. I'm about a week in and I'm down 8 lbs!! And sorry if theres typos I'm on my phone lol

From L-R (you can click the images to make them larger): Crackers I made from three super easy ingredients; My zucchini crust taco pizza; Meathghetti; Ramekin Tacos; Gelatin Wigglers from herbal tea and stevia for the kids; An all meat cake for my Birthday, frosted with mashed cauliflower.

Hey, NoDummy! Thank you! I prefer the cauliflower for more savory dishes, such as lasagna, standard pizza, and for lasagna roll-ups and the zucchini for the spicier dishes, like the taco pizza, Doritos, enchiladas, etc, where you're adding acidic flavors. So, cauliflower for Italian and Zucchini for Mexican!

Attached is a picture of a few of the many Mexican dishes for which I use the zucchini. Only the Spanish rice on that platter is cauliflower. Pictured are enchiladas, tostadas, quesadilla, and a crispy taco shell.

I SO love the wigglers - too cute! the meat cake is SUCH an awesome idea - and what kind of dip was with those crackers?? both look yummy! ive seen the meatghetti somewhere... im thinking it was your FB page though. Taco pizza... drool... you should deliver

I dont use the whole packet of soup mix... it makes it too salty. whats wrong with it?? I also add SF ketchup and hubby adds mustard to the top of his.

Well....I guess it just didn't taste as good to me as everyone said it did.. but then again, living on the west coast.. I have never had an actual White Castle Burger...but I will definitely try it again.. I love anything with ground beef!!

Yes! They're all at Your Lighter Side. If you google "Your Lighter Side" and then scroll down the right side and click "cinco de mayo" you will find all of the recipes there under that tab.

Or you can google "your Lighter Side recipes" and it will be there with the 250 recipes I have on the site.

I love enchiladas!

I eat them without the tortillas. Just the sauce, onion, shredded chicken, cheese....Then topped with shredded lettuce and sour cream. Delish!
