Cream cheese muffin twist
Hello-
Just want to share my "twist" on the recipe..instead of muffins, I put the mixture in a small loaf pan and it ends up like a cheesecake....yummmmmmmm(my non-low carbing friend ate 3/4 of the loaf) 2 packages cream cheese 2 eggs 1/2 cup splenda 1 teaspoon Vanill Cinnamon sprinkled on top Bake at 350 for a 1/2 hour |

I am back
Hi I am going to try again Atkins and see if I can lose this additional 30 lbs. I have lost a total of 140 lbs with the low carb diet and getting this last 30 lbs off is harder than the first 100lbs. I tried weight watchers and I just know that the carbs are not good for me and make me crave more bread. So back to basics, and I am going to try and cut out the cheese seeing how I now have a an allergy to the dairy. So good luck to everyone and thanks for the support.

Yep - just don't go crazy and eat all of them in one day, because you're supposed to limit your cheese consumption to 3 or 4 oz on induction, so plan them into your day's food accordingly.

If you like cheesecake, you'll like the cream cheese muffins. As with cheesecake, you really need to let them chill overnight before eating them to give them the best flavor.
There's an entire thread devoted to them - many, many different flavor and addition variations, some suitable for induction, others that you'll need to wait until you hit the proper rung. |

Thank you so much. I made this, some in the pan and the other I put in the fridge. I just tasted the one from the ridge and it tastes like cheesecake. I used honey roasted peanuts for the crust. Good stuff.

Last night's dinner ~ cauliflower crust pizza and salad
This was a hit with all the kids and with me! Loved it ![]() ![]() Tonight's dinner ~ Pork rind crust fried chicken, mashed cauliflower and salad The chicken was excellent! Not as crisp as I like it but it was my first time. The "potatoes" turned out a little too soupy but again it was my first time making them. They tasted delicious though! ![]() |
