Jazzlebug - You are doing great! Another inspiration for me! You're really beautiful too! I'm trying to battle my pounds with a thyroid problem which I didn't have pre-children, when I did Atkins and was very successful, so hopefully this board will be the extra help I need!

Yay I finally made it through all 3 threads - my poor husband has been a porn widower over the last 4 days!

But I now have a bunch of recipes, and I aim to take photos of the stuff I make or eat and post it here. I am not the most exciting cook but will give it a go!

I partially cooked up a 700 gram bag of frozen cauliflower (you could use fresh), then drained and finished cooking it in 500 grams liquid chicken stock, and one small onion.

Separately I cooked up 500 grams of mushrooms in butter, then added it all together and pureed it until it was as smooth as I could get it.

When I am ready to eat I reheat a portion and then swirl fresh cream into it.

Simple and yummy! And freezable before the addition of the cream.

Last nights dinner - was trying to see if I could eat chicken without gagging - sadly I gave most of the chicken to my hubby and really enjoyed the mushrooms and sauce LOL

I am not a fan of chicken~ I have found ways to make myself love it, though, in certain dishes! You'll find your groove, too. That looks great!

I used to love chicken, in fact that was the problem, I ate too much of it and now just the thought of it makes me nauseous. I try again every now and then (like last night) but end up forcing down a few pieces and giving the rest to hubby

The mushrooms and sauce were divine though! I even licked the plate clean LOL

I found the recipe here (it is NOT a low carb site)
