To those having a problem with cocoa powder, have you tried Dutch-processed cocoa powder? It is less acidic, has an even deeper chocolate taste and gets a darker brown color when cooked compared to natural cocoa powder. I really like this but I can't find the cheaper version I used to buy
It makes the best (non LC) chocolate cake ever! |

Pics don't really do it justice, but Moroccan leg of lamb, marinated in butter, coriander, ground cumin and coriander seeds, garlic, paprika.
![]() ![]() Roasted red pepper soup (though I didn't use too much pepper since it's a bit on the high-carb side) chicken stock, blackened peppers, spring onion, garlic, coriander, chilli, cream ![]() |

The Broiled Double Down
My own version, made this evening and thoroughly enjoyed without firing up my grill:
DSCN1134.JPG Two chicken thighs pounded thinner, skin on; uncured smoked bacon, 2 roma tomato slices, 1.5 slices Pepper Jack, and a sauce made of mayo, SF ketchup, and horseradish mustard |

Im probably not the best recipe writer because I measure by both eye and taste, not cups & tsps but Ill give it a bash
Good quality beef mince, it really does make a difference to the end result - 4 cloves of garlic, minced knob of ginger, minced few tbsp of worcesteshire sauce 2 finely chopped tomatoes freshly ground salt and pepper 1-3 minced fresh chillies depending how hot you like it *fry the onions in olive oil for 5 mins on a medium heat till soft then add garlic, ginger and chilli, fry for another minute taking care not to burn the mixture *add the mince and brown all over *add tomatoes, worcesteshire sauce and seasoning *cover mixture with chicken stock (guess you can use beef too) so that there is about 1" stock over the top of mince and simmer till all the liquid has gone DONE! *Boil your cauli (1/2 head) till very tender then drain and mash with cream, butter and sour cream till the consistency is creamy-just add a little of each till it tastes perfect then season with salt, pepper and a dash of nutmeg Empty mince mixture into a deep baking dish, top with cauliflower mash then cheese of your choice (I used mozzarella and parmesan) shove it in the grill till the top is browned a little Ta-da! Beautiful served with a salad or steamed veggies
