The picture of those eggs on top of the burger inspired me to get up early this morning and make over easy eggs with ham sliced and heated in a pan. I ate it too fast to get a pic.

Jenny's Stuffed Chicken Fiesta
Tonight's dinner... an experiment that turned out great! I pounded out the chicken flat, dipped it in an egg wash and stuffed it with pepper jack cheese, chili ortegas, onions & cilantro. I rolled it up and then rolled it in pork rinds for breading. Sprinkled garlic powder, chipolata seasoning, oregano on top of that and baked it in the oven for 30 minutes at 370. Pulled it out and topped it with salsa, more cheese, olives and copped green onion and put back in the oven to melt the cheese on top. I served it with some avocado slices, more cilantro, a cucumber and tomato relish and a side of steamed zucchini! I also squeezed a few limes on top just before eating to give it that chipolata lime flavor that I love! This was was kickin'!

Had a good dinner tonight, very filling! I made a spinach salad with hot bacon mustard dressing and then cheeseburgers with pickles.

I had a chicken breast, with shredded mozzarella, and a bit of the oregano/basil/garlic tomatoes on top - yummy! Later though, for a snack, I did have cheese and summer sausage. Tomorrow - cheese-pizza!

Grilled pork chops (marinated in Worcestershire, soy sauce and garlic) homemade coleslaw (cabbage mix, mayo, vinegar, salt and pepper)
![]() Technically the carrots in the coleslaw aren't induction friendly but I chose not to pick them out (not gonna get fat(ter) from a few carrots). The little cup had some A1 sauce in it which I don't think is induction friendly either so I edited it out ![]() |

I dont know how to quote another thread yet... but I just made (and devoured) JennyFedei's stuffed Mexican chicken and OMG- that was one of the best things I have eaten in a long long time. That is a definite keeper and DH loved it, too. Thanks, JennyFedei!
