(originally posted by Barbo, and then LindaSue I believe) ROASTED RED PEPPER & TOMATO SOUP 2 tablespoons butter 2 tablespoon olive oil 2 12-ounce jars roasted red peppers, drained and coarsely chopped, 15 ounces drained weight 14.5 ounce can diced tomatoes 3 cups chicken broth 1/4 cup red onion, minced 2 cloves garlic, minced 4-5 leaves fresh basil * 1/2 teaspoon onion powder * 1/2 teaspoon garlic powder * 1/2 teaspoon pepper 1/2 teaspoon salt 1/2 teaspoon dried basil 2 tablespoons granular Splenda or equivalent liquid Splenda 1 cup heavy cream Combine everything except the cream in a large pot. Bring to a boil then simmer over low heat, covered, 25 minutes, stirring often. Remove from the heat and cool slightly before pureeing in a blender or with an immersion blender. Stir in the cream and adjust the seasonings to taste. Makes 7 cups or 7 servings * I had all of the ingredients on hand except the fresh basil so I left it out. Barbo used 1 tablespoon each onion and garlic powder. I reduced the amount to save on carbs. Add one more carb per serving if you use a full tablespoon of each. Per Serving: 232 Calories; 20g Fat; 4g Protein; 9g Carbohydrate; 2g Dietary Fiber; 7g Net Carbs This is very good and I'm not usually crazy about tomato soup. There is only a half carb savings per serving by using liquid Splenda instead of granular so I didn't bother posting separate counts.

what size tupperware bowl did you use for the OMM? It can't be too thin or it would be really hard to slice.....
I usually make a triple batch of sweet flavored ones and microwave it in a large mouth quart jar and just slice it up. But that would be a bit too small diameter for a sandwich (in my opinion). |

i used HWC instead of butter since I know it makes eggs almost tripple in size.. then I used one about the size of a sandwich keeper, so maybe 5 X 5?? It was round though.. About the size of my hand. It came out about 3/4 in thick, and I grilled the inner side keeping the ugly top and bottom towards the cheese.. lol.. crisps up better that way too!

I made the grilled cheese OMM by the way it was good! Tastes just like "real" bread. BUT I was trying to soften my butter to butter the other side and well.. It got a bit burned and then my butter was totally liquified so it soaked up.. but it was still awesome. here is my picture, my kids monkey plate and all

heat the oil, add onions and garlic until tender. cook chicken until starting to crisp. add cream, coconut milk, curry powder, (salt if wanted) sriracha and zest + juice. stir well and bring to a boil. let simmer 2 - 3 mins. add julienne'd zuchini and cook for 1 min (I freeze mine first then defrost half way to make faster to cook! if yours is fresh add it with the chicken). add the spinach and cook until just starting to wilt. stir often to ensure even wilting! serve over "rice" I also like to add another squeeze of lime juice on top you can use any 2 veggies you like; peppers and green beans are common. though i wouldnt recommend tomatoes! I think I have a glass bowl that is flat bottomed that just might work for that OMM! Thanks! Now I am excited. I need something like bread for sandwiches and this just might work! I don't like the store bought LC wraps or tortillas, they are just bland. I tried the floopsie but don't like the eggy taste (not for bread anyway, it was good with syrup though).

Good idea on the Flax bun. I haven't had them in ages. Those are what saved me when I first started LC and needed something to dunk in my eggs LOL. (And for eggs benedict!)
Never tried it with HWC, I just popped one in the microwave. Going to have grilled cheese with my soup for lunch!! ![]() (Very pretty plate in the bottom pic!) Quote:

I am will you on the cocoa powder. I can't use it because I don't like the taste. It is way too bitter for me.

I so needed this today, you have no idea! My all time favorite comfort meal. The soup is a bit carby at 7 net per cup. But Flax is great because it's almost all fiber. So the whole meal is coming in at about 9 carbs. I had them to spare today, so ![]() (I used the same bowl for the flax bun as the soup) ![]() |
