Then just fry the breaded steak fingers in a little oil and serve. The "gravy" is more of a cream sauce, but the flavor goes well with the steak fingers. I used: 1/2 cup heavy cream 1/4 cup sour cream salt and black pepper to taste It is very basic, but you could add a little sage or thyme for a little extra flavor. Hope this helps! WAHOOOO!!!!!!!!! This more than fills me for brekkie and I find that I am still not hungry even when lunch rolls around. The meal is on a small bread plate (just to give you an idea of size). I just love low carb

Hi Ronda, these muffins are so easy. Just get a 12 piece muffin tray that is for large muffins. I make up a mixture of chopped up ham, shallots, capsicum and about 1 cup of cheese. I just "guesstimate" the amounts of the ingredients. But make enough to fill the cups about half. Then I whisk up about 10-12 eggs with a bit of salt and pepper and any other spice or herb that takes your fancy. Pour the egg into each of the muffin cups and fill to about 3/4 full. The I place them in the oven at about 200 degrees celcius which I think is about 375 degree farenheit. I think but you may want to check it. Then I bake them for about 20-25 mins. Depending on your oven. Just keep an eye on them. And that is about it

Kielbasa seared in a pan and served alonside sauteed brussels sprouts. The veg was saueteed up in bacon grease, salt and pepper and served with butter. Ate the kielbasa with mustard and lc ketchup.

Here's a huge lc pizza I made with the cheese and egg crispy crust. Half is pizza sauce, pepperoni, canadian bacon, provolone cheese and black olives. The other half is artichoke parmesan dip, provolone and black olive. DH and DS had ordered their own pizza that night so when this came out of the oven I slipped it into a pizza box, parchment and all.

Another pizza with the thin and crispy crust, this time made in an 8 inch cake pan. This one has pizza sauce, pepperoni and canadian bacon. Ate two slices and saved the other two to eat cold as leftovers packed at work for lunch. Very good!

This is a chicken breast dish I made up this past week. I seared the chicken in butter and olive oil after putting a Greek seasoning on it. Made sure the sides were cooked and then removed. Added cream, chicken boullion, water to the butter and chicken bits and put the chicken back in to cook until done. Cut it into bite sized pieces and served with the sauce and green beans.
This was really rich, but really good! ![]() |

Lunch today - DH, DS and I went out to lunch and I wasn't too hungry so I went with a side salad and shared an order of buffalo wings and ranch with DH. The salad had too much red onion so I gave that to DH for his chili. Otherwise it was tomato, cucumber, iceberg and hidden valley ranch. Please ignore DH's chili in the first photo.

LOL - sure!!! I got the crust idea here:
Thin & Crispy Pizza Crust! Easiest EVER! Pics included! I made mine with the 3 eggs and 3 cups of mozzarella, but added some shredded parmesan and this tuscan seasoning we buy from spices and teas (so good!). I baked it on one side for 20 and then flipped it for 10 more to make it even crispier. The edges burn, but no big. If you use parchment, it is easy to flip. Then: lc pizza sauce (I used Targets Archer Farms brand) turkey pepperoni (less greasy than regular) canadian bacon slices of provolone cheese black olives The other side was an artichoke parmesan dip from the grocery store (mayo, parmesan, artichokes, garlic) and then parmesan and black olives. Broil, and done! I could barely eat two slices - it was so fillling. I made the 8 inch one with one egg, one cup-ish of cheese and seasoning. Baked it on one side at 350 for 15 minutes and the other side for 10 minutes. I liked this one even better. Enjoy! |
