Got the idea from cleo's "cake".. I made 3 oz meatloaf cupcakes, and "frosted" them with cauli-mash.. Freaking awesome! Got out the star tip and the piping bag even lol.. I like to play with my food ![]() |

turkey soup (to use up leftovers)
Quote:
Just after Xmas, we had too much turkey leftover and I was beginning induction so I threw together this soup to use it up and everyone in the house LOVED it. In the stock pot: de-boned turkey leftovers green beans onion celery chicken broth 3T salsa I know green beans aren't IF for everyone but in the soup, they were minimal per serving..also, the salsa gave it just the kick it needed without all the carbs found in canned diced tomatoes |

I have a question - and I promise to contribute photos to this thread as soon as I figure out how to get photos off my droid...
How do you rice cauliflower? I have a ricer and when I tried it nothing really riced, it just mashed up (very nicely). Do you have to cook it almost to mush status? I'd love love love to try some of the "rice" dishes... |

The only way I've trid to rice cauliflower is to shred it raw. I use an ancient salad shooter, but those who live in the 21st century could use a shredding disc on their food processor. If you're limited to a hand grater, I would suggest shredding it directly from the head of cauliflower to avoid skinned knuckles, instead of trying to do individual florets. Then I cook it lightly until it's a rice texture - not mushy. I usually make a "fried rice" so that I can more easily control how well done it is. |

chocolate mousse
Quote:
1/2C HWC 1T dark cocoa 1T splenda 1/2 tsp vanilla extract put in magic bullet in that order, buzz buzz, done then add a dollop of cool whip and enjoy it is so filling and satiating that I usually only eat a few spoons of it THEN, I put the 'lid' back onto it, refridge overnight, the just add coffee to the rest in the a.m. for a creamy mocha latte (fill with coffee, put the 'lid' back on and shake and it is done) |

I put it in the food processor raw until its small bits, then pop in the microwave for a minute. it steams quickly and you dont break it up too bad.

i guess if you thawed the frozen and chopped it roughly, or chopped it when its still frozen to get uniform pieces it might work..
