New to Low Carb Friends

This website is the best. I can not beleive the dishes that you guys come up with, they all look very good I just started the atkins low cark diet and its very had coming up with things that are easy and fast to cook. I have a goal that I want to reach and every little help will be appriciated. Thanks

They look so yummy!!!! Hey Aqua I got short ribs again, I got big meaty ones and they were tough I was so bummed, you put a lid on them to start right? I think I forgot to do that, and it was getting late and I may have rushed them. I never had them before you posted them and I love them, except now they were almost $5/pound, sort of expensive I thought.

Garlic wings sound good for the game tonight!

Hi Amber!

Yeah the short ribs have to cook with a lid on them for like an hour or so. That way they steam and get tender. Then you remove the lid and let them brown in the grease for like 30 minutes.

I usually get them for like $2.79 a pound here when they're on sale and like $3.79 regular price. Sorry they came out tough!

And oh yeah wings are always good for a game!

I made the Pesto Chicken roll ups for the first time tonight and WOW!!!!!! delicious, I added ham and Aspargus to them a must keep!

If you want some fall apart short ribs, brown them, then add a cup of red wine and beef broth, some onions, a little thyme, a little rosemary then put a tight cover on them and bake at 275-300* for 3 hours. Very tender. The need to be braised. I put them in an enamel cast iron pot.

Looking delish as alway aqua Anyone know where I can find LC (like induction type) recipies that are also very low cost?? I'm on a VERY tight budget and its so easy to eat badly. If I could get a week or two of low cost recipies it would be great, thanx ladies.

The first time I made those short ribs I was in heaven, I think I forgot to put the lid on, I dont know why they got so expensive, but I will try them again soon.

Hun for low cost induction, stick to eggs, and whatever meat is on sale. Get some chicken breasts, some hamburger and bacon .Get some cheese, and some low salt lunch meat with zero carbs you can eat for a week with that. Add some salad mixes, celery, etc

Agreed. I did "burger in a bowl" meals for a while with side salads made from the bag mixes. I also did salads with eggs, bacon, cheese and grilled/fried chicken breasts. I'm not sure if I can post the noodleless lasagna recipe so hopefully I don't get in trouble but that has pepperoni, tomato sauce, ricotta and mozzarella cheeses and ground beef (I use turkey). A 13x9 pan of that lasted me all week.

Breakfast has always been harder for me so I'm anxious to hear ideas for breakfasts on a budget. Maybe hot flax cereal or flax muffins?

I cant eat the flax muffins and stuff to often or I stall and dont lose, I drink an Atkins shake everyday and it lasts until 12-1, now I do drink coffee that has half and half in it so maybe that helps too, I am not a big fan of breakfast so the shakes are just really great to get something into me.

Maybe almond butter on celery? Or PB

This is simple with garlic powder and Old Bay seasoning... butter and a little salt
But one of my favorites! It's not cooked in the picture, I was just about to put it in the oven. When I make it again, I'll post what the finished product looks like.

Sorry I havnt posted in a while.. Im still struggling hardcore.. Im thinking about seeing a eating disorder specialist to see if maybe I can get some help.. IDC what you think.. Compulsive Overeating is an eating disorder.. Im addicted to food.. And its killing me..

Those absolutely tasty pesto chicken rolls (w/ provolone cheese!). Even my DH loved them! 10 points to Agua! I wrapped the skin back around it to hold in all the cheese and to keep the meat more moist.. Plus, the crunch was fun!



Cheezeboogers w/ pickled onions & garlic shroomies


Eggs & stuffed sausage (sausage wrapped around a pepperjack stick!)


And just for funs.. My babies inducing a sugar coma on their birthday

of course i loved them! pesto is my favorite!!
i had to alter the recipe a tad.. didnt have any fresh basil or parm, so i had to use freeze dried basil & dry parm.. but the taste was fantastic! i also used roasted garlic instead of just fresh.. i mean, it was fresh.. but i roasted it first... it was lovely!

im just happy my hubby liked it, cause he hates "weird food"..

Awlass you can do this hun, honestly you can, my friend went to OA and lost 70 pounds maybe that support and doing low carb will help! I didnt see the kid's photo though??? Take care I was wondering how you were doing!

I couldnt get the kids' photos to load.. internet issues yaknowwhatimean... will try again in a few..


The jalapeno lime butter was really difficult.. i couldnt get the lime juice to stay mixed in!!

I segmented 1 small lime, and crushed the segments (maybe just cutting into small bits will hold in some juice and make it easier to mix with the butter?)
shredded 1 jalapeno. (maybe 2 next time because the lime really was strong. wasnt as spicy as id have liked it to be)
softened 2 sticks of butter.

now heres the hard part..

mix everything in a metal bowl.. combine as well as you can..

stick the metal bowl into a bigger bowl half filled with ice water!

whip and whip and whip and whip that butter until its so cold you cant move your arms.. dont stop whipping or the lime juice will separate!

Quickly scoop into a sheet of plastic wrap and roll into a log.. wrap it tight and quickly put it into the coldest part of your freezer... or just put it into small ice cube trays.. one that makes 1 Tbs cubes.. that'd be easier I think...
