Off subject, but for scotch eggs do you soft boil them so you don't over cook them when you bake the sausage, and about how long at what temp do you cook them?

I just hard boil them, and they never get over cooked. I think a soft boiled scotch egg would be the best! Although might be difficult to cover in sausage.
I sometimes mix in 1 T flax per 2 oz sausage for a fiber boost and extra stability. I bake at 400° until sausage is cooked. |

![]() Baked chicken: 1 w/ brie, 1 w/ jalapeno hollandaise, extra crispy skin on the side ![]() Moose steaks, blanched spinach, can of frenched green beans w/ Irish cheddar ![]() SFS's pancake recipe + 2 scoops vanila protein powder, topped with coconut oil & 1/2 T blueberries (ignore the berries of course!) ![]() Grilled flax n cheese, cream of tomato & spinach with moose meat ![]()

Im not sure why, but lately the OMM recipe is just disgusting to me! I cant figure out why.. I know my flax is still good, so that cant be why.. I just wish I had another bread recipe that doesnt use any flours, that isnt the revolution roll!

NOTE TO SELF: frozen eggs dont make the best hard boiled eggs... On the other hand, cream cheese & spinach stuffed scotch eggs are AWESOME!!

then post the yummy simple foods for when the rest of us feel lazy lol...
I chopped 1/4 c fresh spinach, and mixed it with 1 oz cream cheese, rolled it into 2 balls... Cut the eggs open enough to slip the yolks out (i ate em w/ seasoning salt) push the cc/spinach balls inside and continue to make as normal. Be sure the sausage is sealed well to avoid leakage... Ive also stuffed with white american cheese before.. That was the best thing Ive ever ate LC. |

I highly recommend the jalapeno hollandaise wi/ chicken.. My non LC hubby, who shrinks in fear of new foods, was practically melting from his chair over this!

Awlass- you are a genius, I love scotch eggs but I struggle getting the sausage on them, flax is the answer, duh! I would have never thought of that. If you are tired of the OMM try the PB one, that is so delicious, I agree the revolution rolls dont do it for me,too eggy and un bread like.
Made a great dish tonight, should have taken a pic but we all woofed it in, I sauteed onions and celery in coconut oil, then added Mahi Mahi, and a few tablesppons of sofrito and a can of coconut milk it was so good even my 10 year old son loved it, I hate the taste of coconut but the milk isn't really coconut flavored. Sofrito comes in a jar it is tomato, peppers, cilantro, onion, garlic all mixed up together and less than 1 carb per tablespoon no added sugar.

Cleo's IF inspired chili.. Made with diced beef and chicken instead of the burger; tomato paste, chopped roma tomato & jalapeno instead of Ro-Tel... Was absolutely FANTASTIC!! Even my non LC husband love it!

Yeppers....In the fresh seafood section of the grocery store where I shop, they have raw shelled/deveined large shrimp w/tail on (I take the tail off so I can Woof (like Bejewel ) them down faster.:blush:If your store doesn't carry those, then, you can also just buy the fresh/raw large prawns and shell/devein yourself. Patricia- I wish I could like those noodles, those look thin the ones I had were fat and sort of weird but those shrimp look delish! I do woof, LOL
What is picadillo? I never heard of that is it Mexican or Spanish? Yes I get sofrito in the mexican store near me, luckily in our downtown we have a small Mexican population so I venture in as the lone white girl getting all my Mexican cheese and meats, LOL I just found Mexican cheese sauce that is delish and 0 carbs I have been bathing in that stuff! Yeah Awlass inspired me to cook better things, now you are back for inspiration. I had Moose in Maine and it is good very lean I think, I like it better than venison. The deer here eat corn I like when they are near soybeans not as gamey! |
