Hey I made your malaysian chicken thighs last night yummmy I had honey throw them on the grill, delicious! I hate the pork and mushrooms tonight yum, this so helps me shop for the week!

Paolisima posted her recipe for the stuffed peppers on the previous page. I will copy/paste her entry.
"Stuffed peppers: chicken breast long/skinny red peppers( i got mine at costco) spinach cream cheese heavy cream mozzarella cheese dice tomatoes scallions In a food processor mix the boiled chicken breast, spinach, cream cheese, salt and pepper. Prep the peppers, I cut the top off and removed the seeds. Stuffed the peppers with the chicken mixture and let them aside. Heavy cream reduction: In a skillet add some butter, dice tomatoes and scallions until soft then add the heavy cream, salt, black pepper and for color I used sazon by goya, let it reduce a bit. In a cooking sheet place the stuffed peppers and pour the sauce on top, add the mozzarella cheese and bake until the peppers are soft and the cheese has melted Im sorry it took me so long to post the recipes but I had hectic weekend and please excuse me if any redaction mistake was made, still learning the tech. words"

Man those pancakes look yummo, I am going to make them this weekend for sure, they could be trouble so portion control will be in order. I hate cucumber, but I got some English ones without the seeds and can tolerate those better. They are a good low carb veg and good for you, I figure if I make my son eat brussel sprouts I can branch out a little. I agree that the variety of food is what makes this WOE much easier, I think we have lots of choices, it is just a matter of being creative
