Stuffed peppers:
chicken breast long/skinny red peppers( i got mine at costco) spinach cream cheese heavy cream mozzarella cheese dice tomatoes scallions In a food processor mix the boiled chicken breast, spinach, cream cheese, salt and pepper. Prep the peppers, I cut the top off and removed the seeds. Stuffed the peppers with the chicken mixture and let them aside. Heavy cream reduction: In a skillet add some butter, dice tomatoes and scallions until soft then add the heavy cream, salt, black pepper and for color I used sazon by goya, let it reduce a bit. In a cooking sheet place the stuffed peppers and pour the sauce on top, add the mozzarella cheese and bake until the peppers are soft and the cheese has melted Im sorry it took me so long to post the recipes but I had hectic weekend and please excuse me if any redaction mistake was made, still learning the tech. words ![]()

Pork in mushrooms sauce:
Pork tenderloin White mushrooms Heavy cream muenster cheese Fry the pork with salt (I season the pork with sazon completa by badia) until well done and set aside. On the same skillet, remove some of the oil and add the mushrooms , let them cook then add the heavy cream ,salt and pepper, after it boils turn off the heat, add the cheese and stir. Serve on top of the tenderloin. |

Beef stuffed cabbage:
Steak or ground beef finely chopped red peppers chopped garlic cabbage leaves heavy cream sauce* tomato paste water In this recipe you can use ground beef or in my case I used some thin steak that I boiled and chopped. In a skillet cook the peppers and garlic then add the beef, tomato paste (I used a tiny bit but if you dont want to use it just mix some paprika and water since im just using the tomato paste for color) and some water, let the water reduce as much as you can since we are stuffing the cabbage with this you dont want it to be too watery. When taking the leaves off the cabbage try to keep them as complete as possible with no holes in it and when you got the leaves out I find easier to blanch (a quick bath on boiling water) them since they could break when closing the edges. Take a leave and put 2 tablespoons (it depends how big the leaves are) of the stuffing in the center and close putting one side on top of the other and then attach the corner with toothpicks to the center (see pic). Put the stuffed cabbage in a skillet and add the heavy cream reduction on top, put the lid on and let them steam on low heat until the cabbage is tender. *The heavy cream reduction is the same recipe I used for the stuffed peppers. ![]() Last edited by PAOLISIMA; 10-31-2010 at 09:07 PM.. |
