Agua-Happy Belated Birthday, and YUMMMMMMM your food looks so delicious!

MCD- No need to be bored! There are fabulous recipes on here. I always print a bunch of stuff that sounds good during the week at work, then on Sunday I go the store and cook ahead so that I am not bored. The rest of the family doesn't eat low carb so I make things that I can a little starch to for them.

Cryssi- thanks for bringing up the sauces, I am a Bernaise freak, same recipe only a little vinegar and shallot and tarragon, I love that on beef, chicken pretty much anything. I have not made any from scratch in a while.

Another thing I like to put on meat, and vegetables is gorganzola butter. I take a 10 oz container of the crumbled stuff, add a little finely chopped shallot, and 2 sticks of softened butter. Mix it all up and then roll it in a log, and wrap with plastic wrap. Then I stick it in the freezer and slice off what I need to put on hot steaks etc, if you like Blue Cheese it is delicious!

How great is a diet that allows rich cream and butter sauces?

Gonna go eat my turkey now and wish for one of those short ribs!

I had meatloaf mixed with chrush pork rinds and onion, and mushrooms sauteed in shallot and garlic, and worcheshire, and reduced with a little heavy cream! Yummy

Yes what is on that chicken?

I have some haddock for tomorrow night I was going to take almond meal and season it and coat it with some heavy cream and roll in that to pan fry, but am curious cause this looks yummo!

My favorite dinner tonight, sausage just sausage, LOL

Son is sick so didnt have to cook, yeah!

For the patties, I boiled a few boneless skinless chicken tenders then ran them through the food processor. Then I added some finely diced peppers, onion powder (cause I didn't feel like cutting an onion at the time), garlic salt, poultry seasoning, black pepper, a couple of eggs and some parm (in the green can) to bind. Then I just pan fried them in a little oil till nice and brown.

The 'sauce' on top is just some bottled Emeril's Dijon mustard. Nothing exciting

Taco Salad Wraps:



Taco meat (seasoned with chili powder, cumin, garlic, onion powder, black pepper) tomatoes, onions, olives, cheese, homemade guac (avocado, sour cream, lemon and lime juice and garlic salt (I was out of cilantro), drizzled with Franks on top of butter lettuce.

Yum they look good. I am making something new tonight, haddock I am going to try to coat with almond meal and spices and pan fry, and spaghetti squash with my homemade pesto.

I had so much tarragon in my yard this summer I experimented making various pestos. I love this one, it was half basil/half tarragon, garlic, lemon, parm/regg/ olive oil and then I used a mix of toasted pecans and hazelnuts, I love toasting them before adding to the pesto. I am not a big fan of pine nuts plus they got really expensive here. I made different ones, some with thyme, a mint pesto that was good too, I like to experiment. Maybe I can figure out hpw to post a pic tonight!

Ok I think I did this right



Haddock, dipped in carbquick, then a mix of egg, then a breading of pork rinds, and almond meal with lots of essence, I have chiptole lime butter that I put on top. The squash is super, I never had it, I am going to keep roasting them and freezing them to have over the winter. The pesto was delicious. My son said yuck, I want pizza, well when I was done he asked to taste it and ended up eating half my plate, LOL Kids!!!! I am always glad he is willing to try things!

Bejewelme - Is that spaghetti squash? Yum. I like it with butter, garlic and parm. Yummy. Never had it with pesto but I am sure its as delish. Will have to try it.

Hey guys!

I've been really busy lately so I haven't even had time to update my blog. I do have some pictures though. Please note the recipes arent up yet, ill try to put them up soon!

Cryssi I was inspired by your chicken patties so I made some too!







I served them with a fresh salad





This is a really hearty beef and cabbage stew. Perfect for those of you who are having cooler weather. No luck for us here yet it's still in the 80's

You need to upload the pictures first, I use photobucket. When the picture is uploaded, there will be codes on the left hand side you use the last one I think it says img code you copy it and paste it here in your post.
