Vegetable and Hot Dog Frittata! So yummy

I started with diced yellow and red pepper, added a little diced onion and some sliced baby bella mushrooms and added 1 sliced Hebrew National hot dog. Sauteed all that up in a pan with a little butter and poured over 2 eggs scrambled with a little heavy cream and water for fluffyness. Then put a top on it and cooked covered on low heat until the top was mostly dry and added 2 slices of white American cheese on top. threw it in the oven (350) until the cheese was melty! This was real, real good!

I am wondering if anyone here can help me. I like to "drink" my breakfast...as in smoothies. Does anyone have some recipes to get me started? I'm a nurse and I work loooong hours, and sometimes I don't get to eat lunch for a while...so it has to be filling. Thanks in advance!!!

Here ya go:

http://www.lowcarbfriends.com/bbs/lo...st-thread.html

I only have vanilla and chocolate. I can make the vanilla into so many other flavors by adding things. Frozen strawberries, frozen mixed berries, which also thicken it up. Real Orange granules (or Real Lemon, Real Lime) and some (more) vanilla extract for a semi-orange julias or some Crystal Light type mix added in (pick a flavor, whatever you like, but just a little, not the whole pack). Coffee ice cubes and coffee in the chocolate to make a mocha.

I like my protein drinks as a shake so it's not Just a liquid drink. Just experiment with whatever flavors you like.

Gosh I miss shrimp! It's just that if I want some, I can tell my papa and he'd send some over. But I have to peel them myself and they're like... alive LOL It looks really delish Rbenz. I often wondered what makes a scampi "scampi"?

The food porn is back. I was dying without my daily fix. LOL.

The shrimp dish looks like buttery goodness, Patricia. Yum Yum.

- For a minute I thought that you had made a LC ice cream with hot dogs cut in. I was about to say hmmm....interesting...I should try it. LOL. The Frittata is equally as delicious though. I love mine with eggplant. No surprise there. Everyone on the thread knows I love eggplant! He He.

Shrimp scampi is one of those creations in which immigrant cooks adapted Italian techniques to American ingredients.

Scampi are in fact tiny, lobster-like crustaceans with pale pink shells (also called langoustines). One traditional way of preparing them in Italy, Ms. Bastianich writes, is to sauté them with olive oil, garlic, onion and white wine. Italian cooks in the United States swapped shrimp for scampi, but kept both names. Thus the dish was born, along with inevitable variations

Have papa or someone else to the peeling live shrimp!
Thanks!

Last time I had lobster we had to boil them alive. I had my DH do it for me.

Hey all!
It's been a while!
I hadn't been cooking very interesting stuff so that's why I haven't posted. I didn't want to post repeats of stuff i've already posted.

Anyway!

Here's a couple of new ones!

There's a big taco they serve around here called a Taco Pirata. It's a big flour tortilla stuffed with grilled steak or fajitas, avocado, muenster cheese, cilantro, and onion! It's delicious, maybe when i'm higher up the ladder i'll try it with a low carb tortilla. But for now all of the above mentioned on a plate!

This was an AMAZING Chicken Alfredo Spinach pizza! On Cleo's Cauli crust of course!

LindaSue's Ranch Baked Tilapia!

Nice side salad with cucumbers, tomato, bacon bits, and cheese! Ate it with Caesar dressing!

Italian three cheese chicken! Mmmmmmmmm

Oven Roasted chicken breast with balsamic roasted veggies topped with grated parmesan!

Yummy tuna cakes with spicy tomato sauce!

Chinese stir-fry with chicken breast and zucchini and yellow squash, soy sauce, chili garlic paste, sesame oil and garlic!

And for dessert, Jody's pumpkin bake!

Phew! That was alot of food!!!

Thanks for the compliments guys!

The Alfredo chicken pizza was made with Cleo's Cauli Pizza Crust. I actually made the crust a few days ahead of time and didn't get to use it. So two days later I made this pizza and I thought the crust was Soooooo good! All the cauliflower smell/taste is gone.

I topped the cold pizza crust with store bought Ragu Alfredo sauce, spinach, cooked chicken cubes, parmesan, and mozzarella. And baked it at 350 for about 10 minutes

I cut it into three strips and ate it. It was very very good!
