This is from Linda's Low Carb Menu's and Recipes. (Love that site!) and roasted asparagus with olive oil. I don't know how to post a link, but here is the recipe. This stuff is delicious!
STEPH'S YUMMY CHICKEN STUFF 2 pounds boneless chicken breasts Salt and pepper, to taste 3 4-ounce cans mushrooms, drained *** 1/3 cup sour cream 1/3 cup mayonnaise 1/2 packet ranch dressing mix, 1/2 ounce or a scant 2 tablespoons 2 tablespoons heavy cream 1/4 cup parmesan cheese, 1 ounce Place the chicken pieces in a single layer in a 9x13" baking dish; season lightly with salt and pepper on both sides. Cover with the mushrooms. Blend the sour cream, mayonnaise, ranch dressing mix and cream; spread over the mushrooms. Sprinkle the parmesan cheese over everything. Bake at 375º 45-60 minutes or until the top is brown and crusty and the chicken is done. I baked mine 45 minutes and the chicken was a little over done and dry. I suggest checking it after 30-35 minutes. **I used fresh mushrooms sauteed in a little butter and just put them on top. Also I just mixed the Parmesan cheese in with the sour cream and mayonnaise and sprinkled a little extra on top. |

erm.. i just threw it together, so i dont have exact measurements...
3 egg yolks aprx 1 T lemon juice aprx 2 T butter aprx 1/2 T hot sauce mix yolks, juice and hot sauce in a food processor (or whisk by hand), melt butter until boiling and add quickly to yolks mixing immediately. remove mixer blade and microwave for aprx 30 seconds in 5-10 second intervals, stirring well between each segment. stop heating when thickened. (be careful to not nuke it for too long, or you'll end up with spicy scrambled eggs ) |

Hello all.
I've been lurking for months and decided to jump in with both feet. My story isn't new: on and off Atkins many times and always fall. The only New Year's resolution I made this year was to take care of myself.
