Cheese stuffed crust pizza...like Pizza Hut (what can I say. I like cheese)



Bacon wrapped stuffed turkey breast, grilled on the stove. It was to die for.



Chili cheese relish dog on an oopsie bun. Ignore the blueberries! Those are on a non-IF fruit pizza in the background.

Amazing food, I wish I were half as creative as yall....

I think my favorite dish at the moment for quickness sake is a cross between crack slaw and the hamburger rotel. I just do hamburger without the sausage fried with cabbage, then add rotel and cream cheese. I would take a picture, but with 6 kids and a hungry dh, it doesn't stay in the pan long enough.

Maybe when the kids are back in school and work slows down, I can try some of yalls mouth watering creations....

I think about what I miss most that I want to eat and then I futz in the kitchen until I achieve happiness. My stuffed cheese-in-the-crust cauliflower pizza is one of my most happy moments, since I so missed the Pizza Hut version.

For me, if I'm going to eat low carb the rest of my life and win my family over, I'd danged better enjoy it; so, for me that means plenty of restaurant-type foods, comfort foods, ethnic choices and snacks.

Dinner tonight: Phlly Cheese Steak pizza



Nancy's Pizza Crust recipe reduced to 1/3, topped with cream cheese on the crust, sauteed onions & peppers, thin sliced leftover steak, topped with a little mozzarella & american (american to make it taste more like Domino's variety, the only thing I'll eat from Domino's!)

Sorry for the crappy pic, my camera batteries were dead so I had to use my phone. I started making this after reading about it on Dollkey's Blog. The cream cheese really makes the recipe come together!

Here are a couple of pics from food i've been cooking lately

These are meatballs on top of sauteed zucchini topped with a tomato alfredo sauce and parmesan. (The tomato alfredo sauce came in a jar it has 4 net carbs per 1/2 cup)







These were oven baked wings that came out very crispy and yummy! I made three different kinds from left to right Cajun wings, Original salt and pepper wings, Chinese chicken wings. All three were really good!




This was a very good restaurant quality meal. Tuscan Pork Medallions served on basil parmesan mashed cauli.





Parmesan crusted tilapia and shrimp with loaded green beans (sour cream, cheese, bacon, mushrooms)





Butter herb roasted chicken breast and vegetables roasted with olive oil, parmesan, and a splash of balsamic vinegar.




Rosemary ranch chicken and grilled vegetables. The vegetables were marinated in the same marinade from the Rosemary ranch chicken. Very good!

I love to make tapenade for a yummy sauce for my crispy fish and juicy chicken. I use just a simple recipe and its so full of flavor!

6 lg green olives with pemento
6 lg black olives
4 cloves pickled garlic or 2 cloves fresh garlic, pinch fresh dill and a splash of rice vinegar
2 Tbs evoo (darkest you can find)
1/2 Tbs parmesean
2-3 leaves basil.

grind it all up in a food processor, adding more evoo as needed. about 2-3 minutes, scraping down the sides every 30 secs. should be a thick rich paste.
