Omg, I had to share this. Look, I've eaten almond meal on induction with no problems before but of course you can omit the base and eat it as a delicious baked crustless cheesecake with the consistency of mousse
I'd have been happy to get this at a restaurant - you can't tell it's guilt free and using the xylitol gets rid of that artificial taste that splenda has Raspberry and coconut cheesecake (Base - almond meal, melted butter, xylitol, coconut oil) (Topping - cream cheese, eggs, coconut essence, xylitol, 3/4 sachet sugarfree rasberry jelly crystals) Garnish - toasted unsweetened coconut Excuse the shoddy whipped cream job, there was only a tiny bit remaining in the can and I was trying to make it round the whole cake! ![]() ![]()

I wish someone would do some salisbury steak and post a pic so that I can drool over it. This is how I eat now. Through my eyes. Calorie free and low-carb. LOL.

Base - I used 1 x 100g bag of almond meal and mixed it up with around 60g melted butter, 5tbsp coconut oil, 3tbsp xylitol. I lined a cake tin with baking paper and pressed the mixture into it so it was spread evenly then put it in the freezer on 'quickfreeze' while I made the topping, otherwise you can leave it in the fridge till it's set (I'm just impatient) Preheat oven to 180c Topping - Blend together with a whisk 2 x 250g tubs of cream cheese at room temperature, 2 eggs, 3/4 sachet of raspberry sugar-free jelly crystals and 1tsp of coconut essence and xylitol (think I used 1/4 cup or something) Anyway I taste-tested it to make sure it tasted ok Pour topping into the cake tin then bake in the oven for 1 hour. Turn heat off, open oven door and leave to cool. Refrigerate and eat the next day. I dry toasted some dessicated coconut for garnish. LC_Monkee, what is Salisbury steak? I made sirloin with chargrilled tomato and blue cheese sauce last night.............. first time trying blue cheese - ![]() ![]() |

Cerise,
Its sort of like a hamburger patty but with gravy/mushrooms on top. Its the poor man's meal. Usually it has onions and mushrooms inside with seasonings, but not always. Depends on the recipe. Salisbury Steak with Wild Mushroom Gravy, Smashed Potatoes with garlic and Herb Cheese and Chives, Creamed Spinach Recipe : Rachael Ray : Food Network I used to eat the frozen dinner version of salisbury steak in college. $1. That was gourmet food at the time. LOL. It beat ketchup soup. Oh memories! ![]() |

Meeks, here is the Chocolate Coconut oil cookie recipe. 3/4 C. virgin coconut oil, 2 eggs, equivalent of 1/2 C. Splenda, 1 t. vanilla, 6-8 scoops Chocolate whey powder, dash of cinnamon. Mix well, put a golf ball sized ball on a glass plate. Microwave 20-40 seconds (depends on the wattage) & sprinkle a little Splenda on top. Good hot but will be very crispy when cool.
