I also grill the cauliflower crusts after oven-baking them to crispen the tops

Frittata I baked using eggs, cream, cheese, butter, avocado, mushrooms & red pepper



Dinner tonight - stir-fried sirloin with shaoxing, ginger, spring onion, red pepper, white pepper, chilli powder, garlic powder, oyster sauce and sesame oil

I made this for dinner last night and I have to say it is THE best meal I have ever had while being on LC! It might be the best meal ive ever had period!
It's got fresh basil, sun dried tomatoes, and a delicious cream sauce! Let me know if you want the recipe!

recipe for the milano please! I have chicken defrosting and would like to try it
wonder if its similar to the sauce I sometimes make? Garlic, cream butter, parmesan, bacon pieces and black pepper

Here is the recipe for the chicken Milano!

Ingredients:
1 tablespoon butter
2 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped (Since sun dried tomatoes are pretty carby I only used 2 tbsp)
1 cup chicken broth, divided
1 cup heavy cream
1 pound skinless, boneless chicken breast halves
salt and pepper to taste
2 tablespoons vegetable oil
2 tablespoons chopped fresh basil


Directions:
1. In a large saucepan over low heat, melt butter; add garlic and cook for 30 seconds. Add the tomatoes and 3/4 cup of the chicken broth; increase to medium heat and bring to a boil. Reduce heat and simmer, uncovered, for about 10 minutes or until the tomatoes are tender. Add the cream and bring to a boil; stirring. Simmer over medium heat until the sauce is thick enough to coat the back of a spoon.

2. Sprinkle the chicken with salt and pepper on both sides. In a large skillet over medium heat, warm oil and saute chicken. Press on chicken occasionally with a slotted spatula. Cook for about 4 minutes per side or until the meat feels springy and is no longer pink inside. Transfer to a board; cover and keep warm. Discard the fat from the skillet.

3. In the same skillet, over medium heat, bring 1/4 cup chicken broth to a boil; stirring the pan juices. Reduce slightly and add to the cream sauce; stir in basil and adjust seasonings to taste.

4. Serve chicken with sauce spooned over sprinkle with extra basil and some mozzarella if desired.

I have a silly question and figured one of you that cook alot would know it...when a recipe calls for 1/2 cup whipped cream...is that 1/2 cup after you whip it or before you whip it generally??...thoughts please?

Tonights dinner, omg so good -
Deep fried whole baby snapper -skin slit at an angle rubbed in sea salt for crispy skin

Fry ginger, spring onion and red pepper in peanut oil then pour over snapper. Seperately smoke peanut oil and sesame oil, pour over fish so that it sizzles then drizzle in soy sauce

Serve with bok choi cooked in shaoxing (Chinese cooking wine) sesame oil, oyster sauce

I dont really measure everything I use but I will post how I made these dishes.

For the country breaded steak I dipped the steak in an egg wash then rolled in half crushed pork rinds half parmesan mixture that I seasoned with garlic powder, onion powder, and pepper. Then fried in oil in pan.


For the chicken fajitas: I cut chicken breasts in strips and sauteed them with a little oil. I seasoned them with salt, pepper, garlic powder, onion powder, and some cumin. (I didnt measure the spices but its to taste more or less) After they were cooked and a little browned I added onions, bell peppers, and tomatoes.


The Chinese beef and cabbage was really good!
I used thin cut chuck steak (it was very tender) stir fried it in a pan, then I added soy sauce, pepper, a fresh garlic clove minced, and about a tsp of chinese garlic chili paste. After the beef was cooked through I added the cabbage sauteed until cooked but still tender crisp, taste and see if it needs more seasonings and voila! It was very good tasted like a chinese restaurant!

For the chicken topped with bacon and garlic and herb cheese: I seasoned some chicken breasts with chicken seasoning and fried them in a pan until cooked. In a separate pan, I fried the bacon. Top the chicken with the bacon and the garlic and herb cheese. (The one I used was Kraft its right by the regular sliced cheese)


For the Kielbasa and onions: I just fried the kielbasa in some oil ( I like it very browned and crisp :blush Then added some onions and fried them until tender. You can top this with some cheddar cheese or muenster cheese and it is really really good! Or just squeeze some lemon juice over it before serving Mmmmmmmmm!

For the Tomato and avocado salad: I just cut some fresh tomato, avocado and onion and drizzled them with lime juice and a little salt. Its a very good and fresh summer salad.

Aquamenti - You had me at tomato/avocado/onion salad. The kielbasa looks pretty tasty as well. I am ready to pull out my spicy mustard.

Cerise - The bok choi looks delicious. It looks like it would be very flavorful. Yum.

The fish dish was ridiculously tasty and surprisingly filling

I made the chicken milano dish this morning to take in for lunch - the shop didn't have any sundried tomatoes though - it has chicken breast, bacon pieces, garlic, cream, butter, mozzarella, basil, white pepper, black pepper, cabbage and mushrooms. Delicious
