It is soooooooooooooooo yummy.

I froze a bowl and whisk in the freezer for about half an hour. Yes, you can wait.

I used heavy whipping cream, a smidge of <fill in your favorite flavor> sugar-free jello mix (I used Strawberry ... it is potent so you don't need a lot) and whisked like mad until it was whipped cream.

You can scoop onto parchment paper to use as "ice cream cookies" or just stick the bowl in the freezer as I did and let it set.

Voilą! Ice cream that is legal and yummy!

that ice cream looks SOOOOOOO yum!! may have to try that! it would work well with a hand mixer instead of a wisk right??

i just cut up the queso or the frier cheese, then drop it in the deep fryer - i use canola oil and then dab it off afterwards so from what ive been told its legal loooove my some fried cheese! especially dipped in Ken's Ranch... dang. now i want fried cheese and im out.

Hey. I put a bit of olive oil in the pan and let it get hot but not smoking. Put in the cheese and let it sit. When I checked it the first time, it was not browning or crisping and I was disappointed. But patience wins because when I checked again, it was crisping nicely.

Yes, a hand mixer or blender or stand mixer. I am lazy and did not feel like cleaning up those utensils so I whisked like a man woman.

The bowl and whisk were frozen for about half an hour. I think that is key. When I was ready, I moved fast. Poured in heavy cream, sprinkled SF jello and whisked like mad. It whips up super quickly.

Once peaks formed, I stuck it back into the freezer and it set about half an hour to forty-five minutes later. Of course I kept checking it which slowed down the time

Worth it, though. Yummmmmmm.

It sets hard but when you scoop it out it gets creamy very fast.

Missouri, I'm sure there are trace carbs but they are negligible. My carton states less than 1g - I'm ok with that.

No sugar in the jello. Make sure you get the SF - sugar free. The jello is very potent so taste as you sprinkle.

wow that 'ice cream' looks amazing.

I count 0.3 carbs per TBSP of heavy cream. Mine is also labelled 2.8 g/100ml so in one cup of cream it would be 7 g per cup. Remember it is usually labelled per serving so if they state trace amount or 0 ( which they can for anything under 1 g/ serving) for 1 tbsp that is technically correct but when you add it up it is not really negligible.

I disagree. If you're eating 20g carbs per day and want to have the dessert in addition to whatever else is on the menu that day, it isn't negligible.

If you're adding in a proportionate serving while also making appropriate changes to the menu so that the dessert is an instead of <fill in blank> selection to the menu, the count certainly is negligible. I think people get that the dessert is unlike a traditional serving of ice cream with 50+ carbs per serving.

It all boils down to choices, like everything else on this (and any other weight loss/lifestyle) plan.
