I nice Caprese salad. With olive oil and just 1/4 tsp of good balsamic. I had this with my leftover "boursin stuffed, pesto chicken with parmigiana'breading' "

the sauce was so simple - just 1/4 cup of thickened cream, 3tbsp of butter, 1tbsp of garlic powder and black pepper with some parsley. Fry bacon pieces seperately and add to the sauce
Ive always used fresh garlic in my cooking but I actually think in this instance, the powder is better |

Most of us already know the delicious joys of a taco salad- but I though I'd post it for any newbies looking for quick easy lunch/dinner ideas.
I prefer fresh tomatoes to a salsa- and use my own spice blend to cut down on carbs. ** note my version uses 2oz of cheddar and 2oz of sour cream. |

Yeah- I love crispy chicken skin. I add a lot of salt to the skin before and after seasoning. I broil it on the top rack skin side down for 10 minutes at 250*C then skin side up for 10 minutes- then lower the temp and the rack and bake for 15 minutes. Yum!

crispy chicken!I made cauliflower pizza dough, oven baked then grilled it, sprinkled with cheese and Nando's hot peri-peri sauce, then rolled up, topped with pizza sauce and more grated cheese, grilled then topped with sour cream and jalapenos - got the idea from Cleo (thank you )Doesn't look all that great, but tasted amazing! ![]() ![]() Last edited by cerisedownunder; 06-22-2010 at 06:23 AM.. |

Another yummy salad 'Almost Greek Salad' the only food I don't like in the entire world (part of my weight problem
) is olives- greek minus the olives.The second picture is a home-made carbonara- over zucchinni 'ribbons' or my amateur attempt at zucchini ribbons. It doesn't look nice in the photo but it was delish! |

Ok here's a couple I found on my camera:
Two cheeseburgers one w/ american, one w/ swiss and a nice big salad. Avocado and a jalapeno on the side! It was so good I didnt even miss the bread!!! ![]() A big juicy steak (I like it extra brown as you can see ) with a side of guacamole and zucchini topped with melted muenster!!!![]() Carne asada skillet. Beef fajitas, chicken, and sausage topped with melted cheese!!! Mmmmmmm! ![]() Caldo Tlalpeno soup. Its a Mexican chicken soup. Mine had chicken, zucchini, green beans, cilantro, onion, and chipotle. Caldo Tlalpeno is traditionally served with melted cheese and avocado on top. ![]() Chicken fajitas with onions and peppers and of course cheese!!! (OK OK I love cheese LOL )![]()

Wow-agua that looks so good! I think a lot of Mexican/south American dishes can be altered to LC and retain all that yummy flavour! I wish we had a better 'international aisle' here. It is mostly other European countries- as obviously that is who mostly lives in France- so I can get lots of Italian and Portuguese food!!

I did not cook this. There's a restaurant we go to and I have lots of LC choices on their menu. Forgive the quality, used DH's iPhone to take pics.

Didn't eat the sides. ![]() Shrimp kinilaw (ceviche) ![]() Lechon Kawali (Deep Fried Pork) ![]() Boneless fish stuffed with tomatoes, onion, lemon grass and ginger, wrapped in cabbage leaves and cooked in coconut milk. DELISH! This is camote tops salad, I used sweet potato leaves. My Grandma makes this all the time and this is my version. So good! ![]() We've been eating out a lot but hopefully I will cook more. |
