![]() Custard-Flan 5 eggs 1 cup cream 1/2c. water 1/2c. SF syrup (Vanilla or Caramel) 1 tsp. vanilla Blend on High 1min. Pour into pie plate or Custard cups Top with cinnamon or nutmeg Set into pan filled 3/4" w/water Bake 350 for 40min. Let cool and then refrigerate. This will be part of my Breakfast in the Am. Tastes good w/coff. I also use this as a dessert after cooking Mex. I add a bit of Kahlua on top. |

^^ that's one of the easiest dishes I've ever made. I just rubbed some Cajun seasoning, garlic powder, chilli powder and white pepper over chicken cubes (but you could use prawns) then fried them along with slices of chorizo in olive oil for a few minutes (browned but not cooked through) then took the pan off the heat, added in the capsicum and put it in a pre-heated oven for 7-8mins to keep the chicken tender and juicy (I HATE dry, overcooked chicken!)then threaded it onto bamboo skewers.
For the dip - I just squeezed fresh lime juice into full fat mayo, then added dried mint flakes, dried chilli flakes & unsweetened dessicated coconut Serve with lime wedges. Easy peasy lemon squeezy ![]() Then, in my hurry to get out the door, I dropped the skewers on the floor as I was trying to wrap them in foil to take to work. Still ate them though! lol

I'm a shift leader within a 5* resort waaaaaay out in the middle of the desert, at one of the biggest tourist destinations in Australia. Today I started cross-training in Human Resources so I can move there when the next position comes up. Also studying nutritional medicine through distant education

Spicy Coconut Curry Prawns over Cauli 'rice' with a virgin 'Pina Colada'
I have this dish at least once a week- I love it!! I can't remember which thread and from whom I stole the Pina Colada idea- but it was awesome. Just blended up some ice with some coconut cream, a splash of lime juice and diet lemon schwepps (or any lemon/lime diet pop). |
