My current favorite meal is
Chicken Enchilada Blossoms..... 4 boneless chicken breast ( cooked and diced) or about 1 1/2 cups 1 block cream cheese 1/2 cup mayo 1 small can chopped green chillis 1 cup grated cheddar cheese Mix all well and heat in the microwave until the cheese melts...stir frequently. I eat this as a dip for veggies....or with a spoon as a meal. Variations....jalepeno's....black olives.....ect can be added! I also make Tortilla Blossoms with it....Buy low carb tortilla's....cut them in 4th's...press them in a cupcake pan...put one spoon full of filling in each one... top with more grated cheese, then bake until the tortilla is browned and holds its shape "crispy".... I have made the tortilla blossoms for numerous events and NO ONE ever realized they were low carb! Enjoy!

My Mom made the YUMMIEST braised boneless beef ribs for lunch!! Rutabegas and cucumbr salad on the side. No kidding - this was by far one of the best home-made Atkins meal I've ever had!!

Low carb cheesecake with a pinenut and almond meal crust. My son's birthday is this Saturday, so he gets a regular NY style cheesecake and I get at least one piece of this before I take it to work

oh yum! They are a a nice size too, the ones we get here are about 5 times the size of that. Thats a good recipe idea for me to take to work. I love colourful dishes, its amazing when you compare low carb food to high carb food like french fries or crumbed chicken or whatever, the latter looks so bland and unappetizing. Its obvious what we were supposed to eat - natures way of attracting us

I'm new here. I've done Atkins in the past but I was a very boring eater, sticking to the same food and making it as easy as possible,.But I just wanna say that all of these dishes are beautiful! It almost as if you aren't even sacrificing when you can eat like this!! Good work everyone....I think I'm gonna keep coming back, and back....

I dont think Ive tried brussell sprouts before! It was one of those things you pushed to the side of your plate as a child. Or hid in your pocket to pretend you'd eaten it

![]() Last night dinner was chicken salad which gave me the hardest time to make it look at least presentable to picture but it was deli-sh....I used red onions, boiled eggs, chicken,some mushrooms and for the sauce used mayo, heavy cream and parsley. |
