Horselvr - Those eggs look good. I love spinach in my scramble eggs.
Patricia - You inspired me. I am going to make myself some salad right now. Tomato, cucumber, olive oil, red wine vinegar, salt/pepper, feta cheese, and grilled shrimp. Yummy. |

I just joined yesterday and have spent a majority of my time collecting recipes from this thread. You ladies are amazing! Does anyone have a recipe for the low-carb version of Portobella Mushroom Pizza? I swear I saw it on here but then couldn't find it when I came back.

Credit where it's due: My husband came up with it! I kind of looked at him like he was smoking some wacky weed, but my golly. I am now seriously addicted to the stuff (the turkey, not wacky weed). It's the most moist turkey I've ever had, and it was in the freezer section, sold as a couple of breasts, so it was also enough food to get us through two meals without having to deal with the whole bird; and because bacon is done at a lower temperature than the turkey, by the time the turkey was cooked, the bacon on the outside was good to go as well!

My supper tonight: 2 louisiana mild sausages diced, half a Vidalia onion, chopped (it was maybe three tbs), 3 cups baby spinach, 3 scrambled eggs, and 2 ozes shredded cheddar cheese form Cowgirl Creamery. DH and I spilt it. It was really tasty.

Hey, Ron! It's cream cheese.
We took an 8 ounce block of the stuff and nuked it until it was soft. Then we mixed in at least half of a red pepper, half of a green pepper, onion, and sliced mushrooms (he actually just laid the mushrooms on top of the CC mix because they were too delicate to mix in). Then he sliced the turkey breasts, slathered in the cream cheese and wrapped the breast with the bacon, securing with toothpicks. Let me see if he added anything I've forgotten. I know to one breast's cream cheese he also added jalapanos. It was a wonderful dish and seriously moist. Everyone in the family went nuts over the dish. |
