I was sick of eating eye fillet as steak so sliced it up and made a beef and snowpea stirfry using garlic, ginger, chilli, oyster sauce, soy sauce & white pepper

I think most of us tend to eat more austerely than the pictures we share here. Most days I'm eating eggs and bacon, chili, things I enjoy that aren't photogenic. I can't eat a bunch of rich food, and I really only want to eat when hungry, so I'm not cooking that much most of the time.
I think what we see here is basically 7 people at any given time, each sharing a meal or two per week. Most nights I'm not eating anything amazingly fancy. The pictures are to disavow the common notion that Atkins is 100% meat and no vegetables, flavor or creativity. It's just a way to say, "See the variety you can enjoy on the most stringent phase of Atkins." I think we're fighting convention in showing the decadence. Speaking to the fat issue, there are definitely low carbers who fare better on lower fat than higher fat. I need 65-80% fat or I feel lousy and stop losing, but I have a good friend who needs lower fat, and she feels wonderfully when she is following a low carb, lower fat plan. |

Food from the last few days..
Jerk shrimp over meatless crackslaw, with cucumber sections ![]() Boneless buffalo wings (crusted in parmesan and flax) with snap peas ![]() The sauce label.. (its soo yummy!!) ![]() Jerk shrimp (the last of it, thank god), mushroom, spinach and cheese stuffed chicken breast with ginormous asparagus and the extra filling that spilled out when rolling. ![]() ![]()

cut the chicken breast in half, leaving it conected on the long side (open it like a book) sautee the filling, spread in on the chicken; roll it up and secure with toothpicks. bake until chicken is cooked then remove the toothpicks.

ROFL. That is too funny. It was an insane concoction, that's for sure. I could only eat 1/2 of it (I ate the flatter-chicken part), and I let Hubby have the other half, with the big chunk of chicken, and he couldn't even finish it! He had a Man V. Food moment and Food won.

That reminds me of that Carl's Jr. breakfast burger except without the hash brown nuggets. Man those babies are good.
Yours looks even tastier though. Mouth is salivating. ![]() I saw an episode of DDD where they added egg and layered the meat! It was a monster burger but looked mouth watering. Yours is right up that alley. ![]() ETA: I just realized that what I thought was an egg under the cheese might just be more cheese. LOL. Either way your burger looks delish! Cheesy meaty goodness.
