Just cut it in half, drizzled in olive oil and roasted in the oven at 220c for 20 mins then added tomato sauce/cheese till melted

![]() Cerise - Your eggplant looks yummy. I think your toppings would go nicely over roasted zucchini as well. I would probably leave out the marinara, since the rest of the items would make it delicious on its own. TO EVERYONE... I am an eggplant lover. ![]() What is your favorite way to cook eggplant? I like to bread mine with crush pork rinds/parmesan/herbs/egg and fry/brown until crispy. Then I layer it with cheese and marinara. Its so good. I've also had it breaded/fried as a snack and dipped in spicy buttermilk ranch. ![]()

My favorite is eggplant torta. It's like an omelet. Grill the eggplant, then remove the peel, mash it, add cooked ground meet and egg, fry. ![]() |

I really want to try that curry recipe someone posted a few pages back. It was chicken with asparagus on cauli-rice. Mmmm that looked so good. I miss sauces LOL.

Actually I've got 2
SMOKY SPICED EGGPLANT 600g eggplants 1 red onion, chopped 1 garlic clove, chopped 1" piece of ginger, chopped 1 green chilli, chopped 1/2 cup oil 1/4 tsp chilli powder 1/2 tsp garam masala 2tsp ground cumin 2 tsp ground coriander 2 tsp salt 1/2 tsp ground black pepper 3-4 tbsp coriander (cilantro) finely chopped SERVES 4 Scorch the eggplants by holding them over a medium gas flame or heating them under a grill (broiler) Keep turning them until skin is blackened on both sides. Set aside until cool then peel off all the charred skin. Roughly chop the flesh Combine the onion, garlic, chilli and ginger and process until chopped together but not forming a paste. Alternatively chop very finely with a knife and mix in a bowl Heat the oil in a heavy, deep-based pan over a medium heat, add the onion mixture and cook until slightly browned (don't let it burn) Add all of the spices, salt and pepper and stir for 1 minute. Add the chopped tomato and simmer until the liquid has reduced. Put the eggplants in a pan and mash them with a wooden spoon, stirring around with the spices. Simmer for 10 minutes or until the eggplants are soft. Stir in the chopped coriander and season with salt, to taste. If you want the other one let me know, its 'Spicy Eggplant' and the eggplants are kept intact if you're not fond of mushed ones |

Morning - I'm really enjoying all the recipes and pictures - can I please ask a question - (I promise I'm not being snarky but) I'm having real issues losing weight - I can stick to induction levels of carbs and totally not budge on the scales - but I'm looking at all these wonderful recipes and I'm asking are you gals who are eating these fantastic dishes losing weight?
I'm getting to the level where even if I ate 3 meals a day - 0 carbs I'd gain weight....I'm gaining weight looking at these pictures!! Are you having success? |

gingerfurball, I do eat the stuff I make but my DH eats probably 75% of the servings. I had noticed that I don't have much appetite and get full easily. To date I have lost 17 lbs. ![]() |

I hate to think that I need to go back to eating fat free to lose weight, but when I did that, I was able to maintain my weight very easily. I switched to low carb after having blood work that came back telling me I had a high risk of heart disease thanks to years of fat free (HFCS laden) foods. Is there a thread where Gina and I can go get advice? (yes I have read the Atkins books) I think my problem is portion size, but I have never had to watch portions and I am a grazer. I am getting depressed even though I really like the food. And all these recipes are AWESOME! |

There are some many threads here that give advice. I can tell you one thing LC is very scientific. If you are eating clean this has to put you into ketosis...If you are in ketosis you are burning stored fat for energy. Check out the other threads and post exactly what you are eating...you will get lots of advice. Good luck to both of you.
