Carrots

Ok - so explain this to me. Carrots aren't technically allowed on Induction (and I checked the website to see if the most recent information would contain them, but it doesn't) BUT, it's got pumpkin, peas, and water chestnuts to name a few. GI of carrots is 49, peas are 48, and pumpkin is 75!
According to ****** - Carb counts -
1/2 cup of carrots shredded (like in the broccoli slaw, and bagged salads, often) is 5.8 grams carbs.
1/2 cup water chestnuts is 9.7 grams carbs.
1/2 cup canned pumpkin is 9.9 grams carbs.

Why is the carrot being beat up on, still? I thought Atkins updated their information on it when the GI ppl fixed it's glycemic index?

Frankly, I'm confused about the whole blacklist on the carrot - and I refuse to be a party to it. I've been Type 2 for 5 years, and I've always allowed small amounts of raw carrots in my diet. If I have to be evicted from Induction to keep doing that, then so be it.

what are the insoluable fiber ratios?

i was often told that pumpkin has lots of fiber, that is why it is often recommended for feeding to constipated pets.lol

but if the fiber in the pumpkin and water chestnuts isn't higher than in carrots...

but if the fiber dosen't lower the GI...then i'm still stumped


and peas?

other than snow peas i can't see how they fit in at all... english peas are very sweet and starchy

All values are for 1/2 cup unless otherwise noted.
shredded raw carrot - 5.8 grams carbs, minus 1.7 g fiber = 4.1 net carbs
cooked carrot - 6 g carbs, 2.2 g fiber = 3.8 net carbs
canned pumpkin - 9.9 g carbs, minus 3.6 g fiber = 6.3 net carbs
raw pumpkin (1 cup of 1" cubes) 8 grams carbs, 1 gram fiber = 7 net carbs.

I eat carrots every now and then, and most days I come in under 10 carbs. Hasn't slowed me down any. I know pumpkin is allowed but I dont eat it because the carb counts scare me off.

If you want to use the Atkins For Life book then you can have carrots during induction.

Carrots have a higher GI then sugar but they have a lower G load beacuse the GI test is based on 50 grams of digestible sugar. The AFL was corrected for that issue and Atkins created several new catagories within the food rungs based on what was called the Atkins glycemic load or AGR. low AGR foods are eat regularly Medium are eat in moderation and High AGR are eat sparingly.
carrots are a medium as is pumpkin.

I thought table sugar was 100? Carrots are like 48 GI.

glucose is 100 not table sugar which is made up of more then one type of sugar molecule

table sugar is sucrose and should be around 50 making it the same as carrots according to Dr Atkins
