Are these ok to eat??

It makes them ok to eat. Make sure to check the labels in boca products as some of theirs have higher carb counts.

I was a little apprehensive, but I just really like these and wasn't sure if the carb count mattered so much as the ingredients when it comes to this type of product. Thanks for the input...

if you are doing a vegetarian Atkins those were a recommneded product back in 2003 BUT they were not recommneed to nonvegetarians for induction eating

small FYI, more companies these days are subtracting the fiber from the total carbs already when they do the count on the back. I'm not saying this is the case with the Boca Burgers, but it's at least feasible that they could be 8.5 carbs apiece and they're just doing the math for you. (Edimame at costco does this)
