cucumber dressing
Cucumber dressing;
1 cucumber, 1/4 cup onion, 1 clove garlic, 1/4 cup cilantro. Puree together, then add some rice vinegar to taste and a splash of olive oil. Of course you can add sea salt if you like. i didnt use the rice vinegar it was very good dressing ![]() |

LOL! My co-worker and I were just talking about cucumber dressing.
Here is the recipe: 1 medium to large English cucumber (Halve lengthwise, then slice thinly) 1/2 cup strained fat-free Greek yogurt 1/4 cup of fresh mint, finely chopped Combine yogurt and mint, add cucumber until coated. Cover and refrigerate for 2-4 hours. Per serving: Calories 14, Fat 0, Sodium 9mg, Carbohydrate 2.5g, Fiber .8g, Protein 1g (I think the protein amount is off.) |

Ohhh...these both sound great. I think I have the ingredients now for the first one. I'm going to try it tonight on my salad. Thanks for the recipes!
