Hello all and a good start for the new week.
Cathy, the chicken muffins are so easy.
1- 12 oz can chicken, drained and flaked
2 eggs
1 tsp dry minced onions
1/4 tsp pepper
1/4 tsp poultry seasoning
2- oz shredded cheddar cheese ( optional )
Mix all ingredients well and spoon into 6 well greased muffin cups
Bake @ 350deg for 30 to 35 min, until set and lightly brown.
Can be frozen.
Sometimes I add 1/2 stalk chopped celery and a couple Tbsp mayo.
Carb count per muffin is : 1/2 to 1 ea
You can also make tuna muffins just sub old bay seasoning for poultry and maybe add some chopped dill pickle.

I am also having a hard time remembering to eat, just dont get so hungry. Ok thats all 4 today. CU2morrow.

Thank you thank you MoniKa for the chicken muffins. Can't wait to do them!!!

Ollamo the creamy nacho soup is from Linda's website I love it. Here's a short version of how i do it. May not be exactly like hers....

brown one pound sausage and cook chopped onions to soft
boil 4 cups chicken broth and 1 bag frozen cauliflour. chop cauliflour as you cook it. I leave my with chunks and pieces but LInda's recipe has you puree it.
add to cauliflour a block of cream cheese and a can of Ro-tel tomatoes (choose your flavor). Cook for a little and enjoy!! I love it. I freeze it and then take some out when I want it. Makes 8 cups
Per serving: 327 calories; 26 g fat; 17 g protein 7 g carbs; 2 g dietary fiber; 5 g net carbs


I got on the scale this am and I am officially down 8 pounds. YEAH!!! Still not back to where I was before I fell off but close enough. I am revved!!!! Here's todays' plan

B egg cream
S cheese wedge
L chicken salad wraps (wrapped in swiss cheese)
S pumpkin muffin
D not sure yet.... have to see what hubby has planned!!!
S sf jello w/hwc

Hey, all, just checking in! Thanks for the great recipes. I just might make a batch of chicken muffins tonight. Never dreamed of making such a thing, but how easy--and it sounds good!

Had a little slip-up last night. Won't go into details...let's just say that some demon sugar crossed my lips and I didn't stop it. BUT today is another day (said in my best Scarlett O'Hara drawl), and it's in the past.

Hope you're all having a great day. I decided to join Cleochatra's mid-year resolution challenge, too, just to give me even MORE accountability--and a goal to shoot for by year's end. It would be SO wonderful to toast a LOSS on New Year's Eve instead of mourning another year shot to he11 like I usually do. Six months. It'll be over in the blink of an eye...why NOT stay on plan??

See you this afternoon!!

hi cathy. can i just say, your menus completely rock!!!! how can anyone not want to be on this woe, especially when they look at your menu.....

L: three scrambled eggs w/ grilled bratwurst, sauted mushrooms and cheese
D: TBD

will not be eating cream cheese concoction later this evening....WILL NOT.

AAHHH Thank you I needed that and I never thought someone would complement me on MY menus!!!!

I did skip the cheese wedge from this AM snack. Just wasn't hungry. and still haven't determined dinner... thinking pork chops, etc.... we shall see.

I SUCK!!!

I have had a headache for going on 3 days and I finally caved in to it. I ate sugery good candy and guess what....headache is gone. I cannot have a headache like this for this week. I have a HUGE graduation party for my son that I am planning and cooking for. I have 55-60 gueats coming and I need to function. I am so stressed out and this "diet" is driving me crazy. I think I am going to have to step away for a little while. I am doing my body so much harm by being on and off and on and off and on and off so much over the past 6 months.

Who am I kidding anyway? I can't do it. I am destined to be a big fat fatty!!! I am feeling stressed and confused and frustrated and plain old feeling sorry for myself right now.

Forgive me for my rant and complaing and pitty party. But that is where I am at right now.

I don't think you should quit. I had my BIG BIG slip up sat. I got right back on the atkins wagon. YOu can do it

I think i had that same attitude last weekend. I'm not just melting away like i would like. It was kind of depressing, I was like well it is't working anyway, so screw it. Sunday I realized that I just need to give it time. I didn' get like this over night, nor can I change myself over night. I restarted, I lost a pound this week( checked yest) I know it isn't a lot, but it's def a start.

I have faith in you

Made thru one week with a 4 pound loss! Finally got over the craving hump and now it is a breeze...no cravings at all. Hang in there Jamie! It WILL get better!

jamie,

if you feel you need to take it easy and not be so strict with your way of eating, then i dont see anything wrong with that. you are listening to your body right now, taking care of your mental status too!!

in the meantime, just make the best possible choices with what you eat. you can practice portion control if you choose to have some dessert at your sons graduation party etc....when you do eat carbs, choose the healthy ones.

treat it like you are on the last phase of atkins!??

you are okay. you are strong. be gentle with yourself.

Good for you girlfriend! I just keep telling myself that it took time to gain all this weight, and its gonna take time to get it off. If its 1 lb or 1/2 pound a week . . . .as long my weight is going down, that's all that matters. Also remember - its a Way of Eathing - not a diet!

Well, week 1 results are in and I've lost 3 lbs. I'm happy, but not as thrilled as I'd hoped to be. But hey, it's a LOSS, and I do feel so much better!!

B: 2 cups of coffee w/ VCO, splenda, H&H; 2 Liv-Active cheese sticks in the car
S: string cheese at desk
L: BK's grilled chicken salad w/ ranch dressing
S: string cheese at desk
D: Not sure - Josh has a soccer game, then Mark has a softball game - hoping to hang in there until we get home and I can have a can of tuna or something!

E: Walk 30 minutes
W: at least 64 oz.

Congrats on your weightloss. Take it easy on the cheese . . . maximum per day is 3 ounces.

Hello all.
Sorry i have been missing.
Jamie, take a deep breath and slow down a bit and just dont go completely of the wagon. It will get better and then u want to kick yourself that you totaly gave in. Hate to see you leave.
I had a good weighin yesterday, lost 4 lbs my first week on induction and am in KetosisI am at the point now I dont get hungry. Forget when its lunch and forget to feed Hubby. He can cope though.
Menu today was

B: 1 slice ham&cheese quiche
1 tiny slice sausage
black coffee

L: 1 Hotdog
2 Tuna Muffins w/rach

D: Philly Cheese Steak Meat fried w/ onion and 2 slices am. Cheese melted
over it.
2 cups Lettuce salad w/ O&V dressind, 8 tiny grape tomatoes and 1/4
avocado.

S: 1 SF Jello w/hwc
1 breakfast custard
Now i am stuffed .

I have been drinking a lot of ice tea, makes very quick in the Sun the last few days.Tonight the temp is down in the 50s compared to 70 last night. Good sleeping weather.

well, I am struggling with nighttime eating again. I was doing so well. and now..... I need an additional treat at night. the sf jello w/ hwc was working but I think I have become tired of it so... any ideas would be greatly appreciated.

Today's menu
B I have some brocc/cheese/egg muffins in the oven
L roast beef roll ups and some creamy nacho soup
D chicken of some kind

That's about all i know for sure right now.

make it a great day. I am going bathing suit shopping today shouldn't be fun!! but has to be done

I know, I know. But I feel like I am doing more damage than good with all this on again off again. I try to eat low carb and then I eat “something” that is completely illegal and I feel like I am sending my blood sugar to the moon and then I go back to low carb and then high sugar and blah, blah, blah.

I just do not know what to do or where to go. I know for now I cannot commit to induction. I have been going on and off of induction for months now.

I know I will be back on it soon but for now I am at a crossroads.

I am not trying to ruin it for anyone else with all my complaining and wishy wash. This is just where I am at right now in my journey. Is it a test? Maybe, and if so I am failing miserably.

My menu so far today has just been bacon, w/mayo wrapped in lettuce.

Pork rinds for snack
Plenty of H20

Not sure whats for dinner, but i'm thinking burgers!

heh..heh..heh. i am the queen of nighttime snacking, i can totally relate. as far as a new treat goes, i have just come off a nightly cream cheese addiction. (i have since then been eating sf jell-o) i mix cream cheese with heavy cream, unsweetened cocoa, splenda and a sf davinci syrup.

try that on for size.

today is the first full day that i have really felt GOOD.

i am on day eight of induction....

last night, i watched a few you tube episodes of , livin la vida lo carb....it was fun!! it reaffirms why i am doing low carb!! i have to admitt, i am celebrating my anniversary w/ DH in two weeks....they serve cheescake and champagne upon arriving at the hotel we are running away, anyways, i was actually planning a day of full cheating!! i have now relized, that if i want to make this WOE apart of my life, i need to take myself seriously!!!!!

i need to take a piece of my own advice, and plan ahead, be prepared, and have LC alternatives!! there is no reason why i shouldnt be able to make a LC cheesecake at home and take it with us!!! i can also bring along some yummy coconut bark....the only thing left to talk myself out of is having a breakfast of delectable crepes!!!

i would feel different about this, if i were further along in my weight loss, like in maintanence but, i will still be in OWL by then.....i will not sabatoge myself. i have alternatives!

maybe i will stop eating eggs right now, and then by the time june 6th rolls around i will be CRAVING OMLETTES....?
