GREAT idea on the money jar, Kim!
I think I'm trying that!Jamie, dear, you're back here this morning and making a go of it. It's just ONE little slip--and it hasn't taken you back to square one! Just keep on keepin' on. Nobody does this perfectly. Learn from it, and go forward! Day 5. Feeling really GOOD. I don’t even need as much sleep—or sleep better & wake up rested—when I eat this way. I LOVE it! Yesterday’s menu (went a little over 20 carbs, but not too much) B – coffee w/cream & davinci, quiche (last day of it—finally!), side of bacon L – fajita beef, peppers, onions, sour cream, salsa, green salad w/green olives, bacon bits, ranch S – pepperoni chips D – ham & cheese rollups, nuked & dipped in mayo & mustard 24 net carbs, but not terrible. Underestimated the carbs in onions & peppers at lunch time. Will also cut back on the processed meats…that never helps me, but it sure is easy. And TASTY! Jenny, you can make chicken broth with any chicken you have. You can boil a whole chicken or chicken parts, strain out the solids and season the broth as you want. Cook until it's all falling apart. You can use it fresh or freeze it in batches to use later. You can even freeze it in ice cube trays (transfer cubes to a ziploc or other container for storage) so it defrosts quickly or just to flavor smaller dishes. You can cook it with a few onions & celery, maybe a bay leaf, then remove those (or keep them in, if you want to use it more like a soup). You can use the cooked chicken for recipes, chicken salad, to top a green salad. If you don't want to cook the skin, peel it off, lay it on a nonstick baking sheet and bake it in the oven with a little salt & pepper until VERY crisp. "Chicken chips" taste wonderful, and they're ZERO carb--plus you don't waste the skin! Dana Carpender (recipe book author) has chicken chips in her cookbook. She also suggests saving chicken wing tips, backs, necks, etc. in a ziploc bag in your freezer until you get enough to cook for broth. She says those parts make the tastiest broth, and it keeps you from wasting any part of your bird. You can even do it with a leftover carcass from rotisserie or baked chicken (or turkey). Hope that helps! Have a wonderful Friday, everybody!!

DO NOT trust the labels. The FDA does not require carbs to be listed if they are under a certain amount. When it says <1 it just means that it isnt quite a whole carb but it may be .9 carbs and that to me equals 1 carb. Anything above .7 I count as 1 carb. I already know that heavy whipping cream has .8 carbs per serving. Now I know that land o lakes cannot remove the carbs from it. There have been many threads on here regarding food labels. No matter how much of it or what brand it is it will still have the same carb count per serving. This was a real eye opener to me ans to others when you consider the amount of carbs I was not counting before I found this out. I just wanted to share the same infor with you. ![]()

Great to hear that you are back on the wagon. I totally get the allergy thing. They are kicking my butt also. I have slept all morning because of it. It is hard whether it is do to weakness or not. I consider myself a pretty "strong" person as do others but for some reason this time around I just cannot seem to do it. I know for me that these boards are "key". I noticed that when I fell away from here I just did a big nose dive. So I am back and now you are back also and we can do this. ![]() |

Jamie, just hang in there you will make it. You are so right about the carbcounts. I count all cheese 1 g per oz, even if it says no carb. Land o Lakes has the cheese and heavy cream marked 0 carbs, doesn't fool me lol.One of our supermarkets had fresh split chicken breasts, leg quarters and thighs on sale for 0.87 a lb. So i stockd up and vacum sealed a whole bunch. I deboned the breasts, when do u get boneless breasts for less $1 a lb. Jenny, i put the bones in the crockpot and make homemade broth. Some people save any chicken bones, keep them in the freezer amd when bag full make broth. I am not that frugal.![]() Today is day 3 and no cheating so far ![]() Its getting hot out west here supposed to be 100+ the next few days I dont like the heat that much, makes me drink lots of ice tea but that is good. Have a nice start of the weekend, see you tomorrow.

roadcat. Thank you for posting the pumpkin recipe, sounds yummie. Have a Q though. I put all in fitday and came up with 35 net carbs total not counting splenda. that is more than 6 g a serving x4.I will still make it but in my silicon muffin cups and see how many i get out of it. Wonder if i could add flaxmeal and stretch the recipe? Will try it and let u know. Last edited by pickles1010 : 05-16-2008 at 07:04 PM. Reason: spelling |

Good Monring
Monika I was just going on what someone else did. I am not good at figuring out carb counts, etc.... sorry if it was incorrect info. I make them in the cups too so I feel pretty good about the carbs. Last night got a little tough. My hubby made stir fry. I ate a little but later ended up snacking. I had some cheese chips and a jello. I know my veggies were BAD yesterday. I am already doing good today. Made omelets wiht cheese, ham, onions, and left over broccoli. They were delish!!!! Here's today's plan B omelet S pumpkin muffin L chicken salad wrap - wrapped in swiss cheese D not sure yet but will be meat and veggies...... S sf jello w/hwc make it a great day!!! Great job Jenny!!! Do you weigh everyday?? Jamie, you can do this... you've done it before so you know it's not unreasonable. and your body's been there before so just stay strong. and you are right the boards are KEY!!! |

I made it through yesturday and am doing fine today. Tomorrow is my walk for autism so food will not be an issue for me. I will eat my breakfast and bring some oopsies and bacon with me and I will be fine until after the walk is over. Then I plan on going out for a steak.YUMMY!
My sleepover was a blast as usual and we made dinner salads with steak and chicken in it so that was perfect. Breakfast today was oopsies and an egg cream. Lunch was another salad and some oopsies and bacon. Dinner....I dunno yet. I feel very tired and groggy and headachey but I know it happens in the beginning. Hopefully tomorrow I will feel more perky. 3 miles is not that long of a walk but we have to get up at 4 am and drive to Chicago and check in by 8 and then the walk starts at 10am. It will be a long day but well worth it for my son and all the other kids affected by autism. I will try to check back in later. Have a great day. ![]() |

Oh my goodness, I am so into this coconut oil thing!!! Talk about NO hunger!!! On Wednesday I found a jar of Spectrum Organics Coconut Oil in the health food section of the supermarket. I cooked my hamburgers in it that night and they tasted great - no coconut taste at all. Then I was googling around trying to figure out what else to do with it and I found a bunch of stuff on "oil pulling." It sounded foul, but what the heck - people were talking about all kinds of benefits - from whiter teeth to softer skin, to appetite suppression - and some actually mentioned cures of cancer and allergies and asthma and stuff. Soooooo, I popped a spoonful of the stuff in my mouth, let it melt and started swishing. It WAS gross - not that it tasted bad because it didn't taste like anything at all - but the texture was odd. I swished for about 10 minutes before I couldn't do it anymore. The next morning I did it again while I was in the shower - got a full 20 minutes in. Yesterday, again in the shower for 20 minutes and today I did it again. Maybe I am delusional, but I SWEAR my teeth ARE whiter and these little wrinkles at the corners of my eyes are almost completely gone, my skin definitely feels less dry and - someone PLEASE explain this to me - my HEELS are no longer dry and cracked - WTH??? Could this possibly all be from 4 episodes of CO pulling???
Anyhow, I'm gonna keep it up for a month and see what happens... Menu for today: B: cheeseburger w/ lettuce, tomato and mayo on Oopsie L: 2T popcorn popped in CO (okay, not induction friendly, but it only popped up to about 2 cups, so about 16g net carb) D: chicken breast, 1 italian sausage and some grilled peppers I am stuffed!! W: about 72 oz. so far Jamie, congrats on the autism walk - that's AWESOME!!! I LOVE the idea of the "money jar" for each day of staying OP!! I'm making that one mine!!!

Hey, all, just stopping by...busy weekend!
Jamie, good luck on your walk tomorrow. I have friends doing the autism walk here, too. yesterday's food: b -- coffee w/cream & davinci, sausage, bacon l -- bunless double hamburger w/bacon, mayo, pickle, tomato, thin slice onion d -- rotisserie chicken, red peppers, mushrooms, mozzarella cooked together until cheese was browning; sprinkle of garlic pepper. YUM! Yikes. Just realized that I had NO salad veggies yesterday! Need to put that on the grocery list so I don't mess that up. I guess the mushrooms and peppers count, actually, huh!! Just seemed like I had messed up for a minute! Hope everybody has a great weekend!! ![]() |

Hi Thinkfast!! I also ordered some VCO (supposedly more of a coconut taste - I LOVE coconut) and some unrefined expellar CO yesterday from The Vitamin Shoppe (thru Amazon - had a certificate
). I also note that I am sleeping better - waking more refreshed and NOT waking up so many times during the night. Yes, of course, I acknowledge all this could be in my head. Time will tell. In the meantime, I don't believe there is any harm in this.Let me know how you like the CO and how you use it!! |

Good mornng!!
Jamie - how was the walk?? Good for you for doing it. I work wiht children 0 - 3 with speical needs and many of them are on the spectrum. IT is a true joy working with them. How was your eating after the walk?? Let this be your kick start!! The CO talk has me very curious. I would love something to take care of my feet - if it really does that. I hate to have to put cream and all on my feet so...... My eating has been good. we went out for dinner last night and I had to peel the skin off fried chicken (thank goodness I've never liked the chicken skins!!) and peeled the breading off fried squsha and zuchinnin. I did have some squash and zuchinni salad from the salad bar and then found out it was made wiht mayo and sugar kinda like a cucumber salad. but I had already eaten it. Not a good decision but still managable. I am still marking an X on my caldender as another successful day. I didn't knowingly eat something not allowed. Today: B pumpkin muffin S L omelet w/ broccili in it S D eating at friends so i will eat the meat and that may be it. I am bringing cole slaw but don't really know how to make it so I am having to buy it. Monika I would love to hear about those chicken muffins you had the other day. make it a great day cathy |

3 days down on plan!!! Woot! Woot!
![]() ![]() ![]() The walk was awsome!!!!!!!. I am exhausted though and my feet and legs hurt a little bit. We woke up at 4:30 am. Left at 6:00am. Got down to Soldier Field at about 7:00. Checked in and waited and waited until 10:30 to start the walk. We walked around and looked at all the booths and displays and fun stuff for a while. It was very windy and very chilly. I think we ended the walk at about 12:30 and then drove home and went to lunch at Red Lobster. YUMMO!!! But it totally upset my stomache. I have not done very well with water today by choice. I didnt want to have to go to the bathroon alot at the walk. So here is my menu for today: B: Atkins shake, oopsie roll S: oopsie rolls and bacon L:shrimp cocktail ,salad, lobster, broccoli,asparagus,butter,1/2 diet coke with lemon, 2 water with lemon. 40 oz. of water so far. Probablly not the best menu for the day but I am pretty happy with my eating for the day. Dinner will probablly be something very small and light. i am stuffed and it is 5:21 pm already. To those who mentioned wanting a "walk" in there area go to the website and contact them at thier email addy. Request a walk in thier area. Check the larger cities where you live to find one that is near you. They have them all over the country. It was a great experience. My first time and definately not my last. I am already planning for next years. ![]() Last edited by DolphinsOnMyMind777 : 05-18-2008 at 03:24 PM. |
