They are Induction food and oh so good. I love my bread and I have found these a great substitute for that. The recipe is so easy to follow and they turn out great..

grrr, i made these and i KNOOOOOOOOOOOW i did them wrong b.c. they look like thin pancake batter on my cookie sheet. lol. IF they at least cook up to the thickness of a pancake i will be happy for this batch. i will use them for sandwiches. maybe i don't have the right kind of mixer. i used the mixer for probably 10 minutes. they were kinda stiff, but, i bet if i held it over my head longer than a minute it would pour out on me. lol.
bleh, i bet if i had beaten the whites for ONE more minute it would have been perfect..that is my kinda luck. but, i was bout to DIE. haha. i will let you know how they turned out.

p.s. i have ALWAYS been a horrible cook. my pancakes ALWAYS look like ameobas.

Oh I am sorry you had a problem with them. They are well worth the time it takes to do them. I just use my electric blender for mine and I do the whites and pinch of cream of tarter first then when they are ready I do the rest. I find that bout 4 min gets me the firm whites. Now my eggs are cold when I start and I don't know if that makes a difference. I am sure some one can let you know.
I am sure you will get it the next time you try..I have always had a problem getting my egg white to firm up before but boy with the cream of tarter it works great..

ya, i used the cream of tarter too. like i said, i have ALWAYS been a horrible cook. lol. my hubby has always loved to cook, so, he does all the cooking in this house. i am gonna have to convince him to cook these for me. haha.
however, the lil super thin crust pizza i made with it was a winner. my 5 year old daughter LOVED it. haha.
i use an electric hand mixer. think that could be the problem? if so, i will pull out the ole blender...aka maragarita maker. haha

another failed attempt at these oopsies. i just CANNOT get them to peak. absolutely no yolks in my whites mixture, i add the cream of tarter, and i beat it like micheal jackson. but, it still won't go past gravy. i put them in mufin tins this time and, well, it was as if i baked 6 big shaped scrambled egg. the texture was disturbing in my mouth. haha
BUT, alas, i know it CAN be done. just, not by me. lol

Dont use a blender.
What brand of mixer are you using? Did you take it up to full speed?
What kind of bowl are you using? you really need either a s/s or copper one because plactic ones can hold on to oils and such that you may have had in there before (yes even after washing). I put my bowl and wisk beaters in the freezer for about a half hour before whipping them.
Oh and for those that they are turning out flat....it could be the humidity in your house. I made them a few times and they came out great. Then one day I made them and it was raining out so it was humid in the house. They turned out like pancakes instead of poofy bun like.

silversunfire-

i have tried the regular handmixer with the 2 beaters on it, a handheld electric wand with a wisk attached, a blender, just a plain ole whish...haha. but, what you said about humidity....yanno, it HAS been stormy and gloomy here the past few days. the thunder is rumbling now. maybe that is the issue...hrmmmm.
i will try the putting the stuff in the freezer for a while first and see if that helps. cuz, i sure would like to see these egg whites stiffen up. haha.
i know you all have your bikini mama challenge, 30/30/30 challenge, don't eat a donut challenge and all that. well, my challenge is :amanda's gonna make a oopsie roll if it kills her and uses all the eggs in her house challenge: lol wish me luck on that

Well I will cheer you on with your challenge and I just know you will get it. As Sheri said use a glass or metal bowl for the egg whites. they are the picky part of this recipe. And remember it does take about 4 minutes of beating with the electric mixer on high to get the whites and pinch of cream of tarter stiff enough. When adding the yolk mixture to it add it slowly( I add mine in about 1/3 at a time) It does not have to be all mixed up just folded in lightly. good luck from you cheering section

mama-- I have days the texture doesn't suit me, too. When they cool and solidify they're different than when they came out of the oven. I love to use mine to make bacon, lettuce and tomato sandwiches and small pizzas under the broiler.

I hope you're feeling better!

I also have to try them. I live a few doors away from a Wendy's and would love to put a baconator into them.

Trish- You mentioned wanting recipes. I made a savory oopsie and it was really good! I have a kitchen-aid stand mixer, so I mixed the 3 oz of cream cheese and 3 egg yolks first, with the wisk attachment, and added 1 tablespoon of garlic powder and about 1/2 cup of shredded cheese, mixed those until it was just a little lumpy, and then poured it into another bowl and cleaned the metal mixing bowl and the wisk really well, and got it totally dry.

Then I wisked the egg whites and cream of tar tar with the same stand mixer, set to 8 speed, and left it for about 5 minutes. The egg whites came to a GREAT peak when I lifted the wisk out. I think most people don't mix the egg whites long enough.....I have only made oopsies twice and they came out great both times.

Anyway, I folded the yellow mix into the egg whites with sweeping, big stir movements. Then I spooned the mixture onto parchment paper on a cookie sheet, shaping them into large round burger buns. I put a little more cheese on top and then baked them at 300 for 30 min and they are GREAT!

I had a BBQ sandwich today on my oopsies (they have been sitting out over night to get stiffer). I used 2 oopsies, lunch meat, and Smokin' Joe Jones LC BBQ sauce, and nuked the whole thing for 30 seconds and it was AWESOME!! I could actually pick it up and eat it!

Definitely check my blog along the right side for recipes. There are myriad ways to use oopsies. The clever people here at LCF also have a lot of uses for oopsies in the recipes forum.
