Look what i just found....

These are like pizza-flavored mini-quiches using pepperoni as the crust in a mini-muffin pan. They also can be made without the pepperoni. You can use small amounts of whatever pizza ingredients you like.
Ingredients:
PIZZA BITS
* 8 oz cream cheese
* 2 eggs
* 1 teaspoon garlic powder
* 1 teaspoon oregano
* ¼ cup sugar-free pizza sauce or spaghetti sauce
* ½ cup shredded mozzarella cheese, or combination mozzarella and other cheese such as Parmesan
* ¼ cup finely minced green pepper or other pizza topping
* 24 slices of thin-sliced pepperoni, preferably in large thin slices

Preparation:
Heat oven to 350° F.

1. Poke the pepperoni slices into the bottoms of the mini-muffin cups, or butter the cups well if you aren't using the pepperoni (I find that oiling the pans doesn't work as well).
2. Cream the cream cheese with a mixer until smooth and fluffy. Add eggs, garlic, and oregano, and beat until smooth.
3. Mix the rest of the ingredients in by hand.
4. Fill the muffin cups with the egg and cheese mixture.
5. Bake for about 15-18 minutes, or until lightly browned on top and set in center. Remove from oven, and cool for a few minutes (5-10), then run a knife around the top to loosen (I use a plastic knife for my nonstick pan). Remove to a plate.

Makes 24 pieces

Nutritional Information: Each piece with pepperoni has 1 gram effective carbohydrate, 3 grams protein, and 67 calories. Without pepperoni, each has 1 gram effective carbohydrate, 2 grams protein, and 47 calories.

How big a slow cooker? I have a mini one that I use for spinach/artichoke dip, would that be big enough, or do I need the more "middle" size?

Now I'm craving buffalo wings.

Jeep, what's up? Did you eat more jellybeans?

I made it through tonight, but just barely. Talk about torture, they made me pick up the pizzas and bring them!! I ate before I left, and I took PB fudge with me. I had the toppings off a meat pizza, and then a few bites of the fudge. So I probably had somewhere in the vicinity of 25 - 30 carbs total today. Not bad!!! This is HUGE for me, this is the first time I've made it through a family get together without eating off plan! Amity lit that fire under my ass this morning, so that was a big help. Thanks girls for all the encoragement....

Now, what can we do for you Jeep?

Good Morning Ladies!!!

Just got caught up with the posts. It took me a while!! I had like six pages to read!! I've been crazy busy with work and family.

I had a meeting at work on Wednesday so I worked from 12:15 am to 9:30 am and had to stay until 11 am to take a training class until 12:30 pm then go to a meeting which I finally walked out of at 3 pm because I just couldn't stay awake any longer. When I got home at 4:30 (because of horrific traffic) I couldn't sleep so I didn't fall asleep until about 7:00 pm and then got up at 11 pm to go back to work at 12:15 am!!!! Crazy. They just don't understand that you can't keep flipping your schedule around to suit them!!

Then Thursday night while i was at work DD called me and said she had an awful earache and her ear was bleeding. She came to my office and I left at 6:00 am with her and took her to the ER. She had a perforated ear drum. Got antibiotics and decongestant, etc. Anyway - it's been a crazy three days.

But I stayed on plan for two of those three days and went off plan one day. It's so frustrating. But I'm back on plan today and I'm going to join your exercise challenge starting today. I guess I'll have a sixteen day challenge.

Snix - I've grown tomatoes, pole beans, zucchini, cucumbers, grape tomatoes, basil, eggplant (my favorite) and peppers. I have a very tiny garden (I live in Brooklyn, NY). But the fresh veggies are the best!!!

hey everyone...hope all are doing well.

jeep- i hope everything is ok

i ran again today with my aunt. i ran for 25 minutes and walked for 15 minutes.
i'm totally exhausted but really proud of myself. it's so much harder running outside than inside on a treadmill. the weather here is so gross. i hate the rain.
can someone PLEASE send me some nice weather. please, please please!!!!!

WHEW! I just got done with the Super Fat Burning 3 mile dvd. Here's the lowdown Amity: It was simple. I normally don't do exercise dvd's because I get lost on the footwork and all, but I was able to keep up with this the entire time. There's like 4 different "moves" or steps or whatever that you do, just alternating them. She does incorporate arm movements and hand weights, with easier modification for both. I didn't use weights at all, and I actually did probably only 20% of the arm stuff cause it was wearing me out! LOL. I'm going to work up to doing those. As long as your feet are moving in time with theirs, you're still getting the 3 miles. It got a little fast in the middle, but I was able to keep up. For me, it's way more practical than doing 3 miles on the treadmill. It seems to go by a lot faster. It was 47 minutes long, but it FLEW by!

I guess I'm glutton for punishment! LOL I went ahead and tried the Power Mile dvd too. It was basically the same thing, only shorter, obviously. A lot more stretching at the end, though. But it sure makes for a quick mile!!

Yay Riot! You did 4 miles today! You're an exercising freak!

I just did 15 minutes on the elliptical. I'm gonna try to do 15 more when I get back from dinner tonight. As long as I get 30 minutes in today I'll call it a success and allow myself to count that as day 2 of exercise.

Riot - awesome job with staying OP!!!!!! You must be SO freaking proud of yourself - what an accomplishment ! Your 3 mile dvd sounds exactly like mine so I don't think I'll be getting that one since I have the other one. I really like the 3 mile one also - it makes me feel like I'm catching up with you guys on the mile tracking thing (even thought I'm not really lol)! I can't believe you did 4 miles - that's so great!!! I thought about doing the last mile of the 3 miles again when I was done but didn't. I may try that next time !

It's a busy day for me today so I could only check in now and probably won't be back until tomorrow.
